The main nutritional caveat is their high cholesterol content, which may matter if you’re watching your intake.

Chromium and manganese levels were also elevated. The liver accumulated more of certain other metals, but the gizzard was the only tissue where cadmium and nickel were consistently detected.

This doesn’t mean every gizzard you buy at the grocery store is contaminated. Metal accumulation depends heavily on what the chickens were fed, the quality of their water, and environmental conditions at the farm. Poultry raised under stricter food safety standards in countries with tighter regulations will generally carry lower risk. But this is worth knowing if you eat gizzards very frequently or source them from regions with less oversight of poultry farming practices.

Best Ways to Cook Them

Gizzards are pure muscle, which means dry heat alone (like pan-frying straight from raw) tends to make them tough and rubbery. The key is moist, gentle cooking: simmering, braising, stewing, or pressure cooking breaks down the connective tissue and produces a tender result. Many traditional recipes simmer gizzards for one to two hours before finishing them with a quick fry for crispness.

If you boil or stew gizzards, the cooking liquid absorbs a meaningful share of the water-soluble vitamins and minerals that leach out during cooking. Using that stock as a base for soup, sauce, or gravy lets you recapture those nutrients instead of pouring them down the drain. Deep frying adds significant calories and fat to what is otherwise an exceptionally lean protein, so if your goal is nutritional value, braising or stewing is the better route.
