The digestive system includes about a dozen organs working together along a roughly 25-foot path from your mouth to your anus. These organs fall into two groups: the hollow organs that form the gastrointestinal (GI) tract, and the accessory organs that produce enzymes and bile to help break food down. Here’s what each one does and where it sits in the sequence.
The GI Tract: Mouth to Anus
The GI tract is one continuous tube of hollow organs. Food passes through them in order: mouth, esophagus, stomach, small intestine, large intestine, and anus. Ring-shaped muscles called sphincters sit between several of these organs, acting as gates that open and close to control the pace of digestion. A sphincter at the bottom of the esophagus keeps stomach acid from rising into your throat. Another at the exit of the stomach meters food into the small intestine in small batches. A third seals off the small intestine until digestion there is complete, then opens to let material pass into the large intestine.
Mouth and Esophagus
Digestion starts the moment you chew. Your teeth break food into smaller pieces while three pairs of salivary glands (the parotid, submandibular, and sublingual glands) release about a liter of saliva a day. That saliva contains amylase, an enzyme that begins breaking starches into simpler sugars before food ever reaches your stomach.
Once you swallow, food enters the esophagus, a muscular tube roughly 10 inches long that connects the throat to the stomach. It doesn’t digest anything. Its only job is transport: waves of muscle contractions push each bite downward in a few seconds.
Stomach
The stomach is a thick-walled, J-shaped pouch that sits just below the diaphragm on the left side of your abdomen. Its glands secrete about 3 liters of gastric juice per day, creating an intensely acidic environment with an average pH around 2.0 (roughly as acidic as lemon juice). That acid kills most bacteria in food and activates enzymes that start breaking down proteins.
The stomach also churns food mechanically, mixing it into a semi-liquid paste. Food typically spends two to five hours here before the pyloric sphincter releases it in small amounts into the small intestine.
Small Intestine
Despite its name, the small intestine is the longest organ in the digestive system, averaging about 22 feet in adults. It’s called “small” because of its narrow diameter, roughly 2.5 centimeters across. This is where the majority of nutrient absorption happens, and it has three distinct sections.
The duodenum is the first and shortest section, connecting directly to the stomach. It receives bile from the gallbladder and digestive enzymes from the pancreas through a shared opening controlled by its own sphincter. These chemicals immediately go to work on the partially digested food arriving from the stomach. The jejunum is the middle section, where most sugars, amino acids, and fatty acids are absorbed into the bloodstream. The ileum is the final section, specialized for absorbing vitamin B12, bile salts, and whatever nutrients the jejunum didn’t catch.
The inner lining of the small intestine is covered in millions of tiny, finger-like projections called villi, which dramatically increase its surface area to roughly 30 square meters. That’s about the size of a studio apartment, all packed inside your abdomen, maximizing contact between food and absorptive cells.
Large Intestine
The large intestine is shorter than the small intestine (about 5 feet long) but wider, averaging 4.8 centimeters in diameter. By the time material reaches here, most nutrients have already been absorbed. The large intestine’s primary job is to pull water and electrolytes out of the remaining waste, compacting it into stool.
It has five named sections that form a frame around the small intestine in your abdomen:
- Cecum: A small pouch about 3 inches long where the small intestine empties. The appendix, a narrow finger-shaped tube, hangs off the cecum. Its exact function is still debated, but it may serve as a reservoir for beneficial gut bacteria.
- Ascending colon: Runs about 8 inches upward along the right side of your abdomen.
- Transverse colon: The longest section at over 18 inches, crossing from right to left beneath your stomach.
- Descending colon: About 6 inches long, running down the left side.
- Sigmoid colon: An S-shaped curve, 14 to 16 inches long, leading to the rectum.
The rectum stores stool until a bowel movement pushes it out through the anus. On average, material takes 36 to 48 hours to move through the large intestine, far longer than any other organ in the system. Much of that time is spent absorbing water and allowing gut bacteria to ferment remaining fiber.
The Three Accessory Organs
Three organs sit outside the GI tract but are essential to digestion. They produce substances that flow into the small intestine through ducts rather than having food pass through them directly.
Liver
The liver is the largest internal organ, positioned just beneath the diaphragm on the right side of your abdomen. Among its many jobs, the one most relevant to digestion is producing bile, a yellowish-green fluid made of water, bile salts, pigments, and cholesterol. Bile salts act as a detergent for fats: they break large fat globules into tiny droplets, giving digestive enzymes much more surface area to work on. The liver produces bile continuously, but you don’t always need it right away, which is where the gallbladder comes in.
Gallbladder
The gallbladder is a small, pear-shaped sac attached to the underside of the liver. It stores and concentrates bile between meals. When fatty food arrives in the duodenum, hormones signal the gallbladder to contract and squeeze bile through the bile duct into the small intestine. People who have had their gallbladder removed can still digest fat, but bile flows into the intestine in a slow, steady trickle instead of a concentrated burst.
Pancreas
The pancreas sits behind the stomach and serves a dual role. Its digestive function is producing a cocktail of enzymes that break down all three major nutrients: amylase for starches, protease for proteins, and lipase for fats. These enzymes flow into the duodenum, where they work alongside bile. The pancreas also releases bicarbonate, which neutralizes stomach acid so those enzymes can function in a less acidic environment.
How Long the Whole Process Takes
From the first bite to elimination, total transit time is typically two to five days, though it varies widely. Food moves through the stomach and small intestine in roughly six hours combined. The large intestine accounts for most of the remaining time, averaging 36 to 48 hours as it slowly extracts water and forms stool. Factors like fiber intake, hydration, physical activity, and individual differences in gut motility all shift these timelines.
