Leafy green vegetables, fatty fish, and colorful fruits and vegetables are the foods most consistently linked to lower glaucoma risk in large studies. No single food can treat glaucoma on its own, and diet works alongside conventional treatment rather than replacing it. But the evidence for certain nutrients is strong enough to shape what you put on your plate.
Leafy Greens and Dietary Nitrates
Leafy greens are the single most studied food group in glaucoma research, and the results are striking. A large prospective study following tens of thousands of people over decades found that those who ate the most dietary nitrates (around 240 mg per day) had a 21% lower risk of developing open-angle glaucoma compared to those who ate the least (around 80 mg per day). For a specific subtype of glaucoma that affects central vision early, the risk reduction was even larger: 48%.
Green leafy vegetables accounted for nearly 57% of the variation in nitrate intake among participants. The protective mechanism comes down to nitric oxide, a molecule your body produces from dietary nitrates. Nitric oxide helps regulate blood flow to the optic nerve and fluid drainage from the eye, both of which go wrong in glaucoma. Eating about 1.5 servings of leafy greens per day was enough to see a meaningful benefit. Kale, spinach, collard greens, Swiss chard, arugula, and romaine lettuce are all rich sources. Beets are another excellent nitrate source outside the leafy green category.
Fatty Fish and Omega-3s
Omega-3 fatty acids from fish and marine sources can modestly lower eye pressure. In a randomized controlled trial, participants who took omega-3 supplements for three months saw an 8% reduction in intraocular pressure compared to those on a placebo. While 8% sounds small, the statistical effect size was large enough for researchers to call it clinically significant.
The study used combinations of EPA and DHA, the two main omega-3 fats found in salmon, mackerel, sardines, anchovies, and krill. You don’t need supplements to get these fats. Two to three servings of fatty fish per week provides a substantial amount. Plant-based omega-3s from flaxseed, chia seeds, and walnuts contain ALA, which your body converts to EPA and DHA at low rates, so fish and seafood remain the more direct source.
Foods Rich in Lutein and Zeaxanthin
Your eyes contain high concentrations of two pigments called lutein and zeaxanthin, and your body cannot make either one. They come entirely from food. In glaucoma research, these compounds show neuroprotective effects, meaning they help the retinal ganglion cells (the nerve cells damaged in glaucoma) survive longer under stress. They appear to do this by reducing oxidative damage and blocking the cell-death pathways that glaucoma triggers.
There’s also evidence that higher intake improves the health of tiny blood vessels in the retina, which matters because poor blood flow to the optic nerve contributes to glaucoma progression independent of eye pressure. The richest food sources are kale, collard greens, spinach, corn, and egg yolks. Orange peppers, broccoli, and pistachios also contribute meaningful amounts. Because lutein and zeaxanthin are fat-soluble, eating these foods with a small amount of fat (olive oil on your salad, for instance) improves absorption.
Vitamins A, C, and E Together
Research highlighted by the American Academy of Ophthalmology found that people who consumed high amounts of vitamins A, C, and E were 47% less likely to develop glaucoma. The surprising detail: the vitamins only provided protection when all three were consumed together. Taking just one or two didn’t show the same benefit.
This points toward eating whole foods that naturally combine these nutrients rather than relying on a single supplement. Sweet potatoes, carrots, and liver are rich in vitamin A. Citrus fruits, bell peppers, strawberries, and broccoli deliver vitamin C. Almonds, sunflower seeds, avocados, and olive oil are strong sources of vitamin E. A varied diet that includes colorful fruits and vegetables alongside nuts and seeds covers all three without much effort.
Magnesium-Rich Foods
Magnesium acts as a natural calcium channel blocker in your body, meaning it helps relax blood vessels and improve circulation. In glaucoma, this matters because the optic nerve often suffers from restricted blood flow. Small clinical studies have found that magnesium supplementation improved visual field performance in glaucoma patients after just one month of use, likely by enhancing blood flow to the eye.
Magnesium also influences nitric oxide pathways, the same system that makes leafy greens beneficial. Good dietary sources include pumpkin seeds, almonds, dark chocolate, black beans, avocados, and whole grains. Many people fall short of recommended magnesium intake, so deliberately including these foods can address a common gap.
Foods to Limit or Watch
High caffeine intake is a concern for people at genetic risk of elevated eye pressure. A large study from the UK Biobank found that people with the highest genetic predisposition to high eye pressure who consumed 321 mg or more of caffeine daily (roughly three to four cups of coffee) had nearly four times the glaucoma prevalence compared to genetically low-risk people who drank no caffeine. For most people, moderate coffee consumption is fine, but if you already have elevated eye pressure or a strong family history, keeping intake below two to three cups a day is a reasonable precaution.
Metabolic health also plays a significant role. A nationally representative study found that people with the highest levels of insulin resistance had more than twice the odds of glaucoma compared to those with the lowest levels. High-sugar diets, refined carbohydrates, and excess body fat all drive insulin resistance. This means that the dietary pattern matters as much as any individual food. Reducing added sugars, choosing whole grains over refined ones, and maintaining a healthy weight all lower glaucoma risk through this metabolic pathway.
Putting It All Together
The pattern that emerges from the research looks a lot like a Mediterranean-style diet: abundant leafy greens, colorful vegetables and fruits, fatty fish a few times a week, nuts and seeds, olive oil, and limited processed food and sugar. This isn’t a coincidence. Glaucoma involves oxidative stress, poor blood flow, and nerve cell damage, all of which respond to the same anti-inflammatory, nutrient-dense foods that protect cardiovascular health.
Diet complements but does not replace conventional glaucoma treatment like eye drops, laser therapy, or surgery. Pressure-lowering medications remain the primary way to slow progression. But given that people in the highest intake groups for leafy greens, omega-3s, and combined antioxidant vitamins consistently show meaningfully lower risk, what you eat represents one of the few modifiable factors within your control.
