If you’ve been told to limit potassium, the foods to watch most closely are beans, potatoes, bananas, tomatoes, oranges, and dairy products. People on a potassium-restricted diet typically aim for 2,000 to 2,500 milligrams per day, and a single cup of cooked black beans (801 mg) or a glass of prune juice (707 mg) can eat up a third of that budget in one sitting. Knowing which foods pack the most potassium, and which swaps keep your meals satisfying, makes a restricted diet far more manageable.
Why Potassium Becomes a Problem
Potassium is an essential mineral that keeps your heart rhythm steady and your muscles working. Healthy kidneys filter out any excess, but when kidney function declines, potassium builds up in the blood. A normal blood potassium level sits below about 5.0 mEq/L. Once it climbs above that, the condition is called hyperkalemia, and symptoms like muscle weakness, numbness, and dangerous heart rhythm changes typically appear above 6.0 mEq/L.
Certain medications also make it harder for your body to clear potassium. ACE inhibitors and ARBs, commonly prescribed for blood pressure, can raise potassium levels, especially in people with reduced kidney function. NSAIDs (common over-the-counter pain relievers like ibuprofen) can compound the effect. If you take any of these, dietary potassium control becomes even more important.
Beans, Lentils, and Legumes
Legumes are among the most potassium-dense foods in any grocery store. A cup of raw pink beans contains over 3,000 mg of potassium, and a cup of raw black beans has nearly 2,900 mg. Cooking reduces those numbers somewhat, but a cup of cooked black turtle beans still delivers about 801 mg, and a cup of cooked lima beans comes in around 969 mg. Baked beans from a can run about 782 mg per cup.
Edamame (green soybeans) is another one that catches people off guard. A cup of frozen edamame has 569 mg before cooking, and a cup of boiled soybeans reaches 970 mg. Even tofu, which feels lighter, contains about 299 mg per half cup of the firm variety. If legumes are a staple in your diet, portion control matters more here than almost anywhere else.
Fruits to Limit
Bananas get the most attention, but they’re far from the only high-potassium fruit. Oranges, cantaloupe, honeydew, dried fruits like apricots and raisins, and avocados (technically a fruit) all rank high. The bigger concern for many people is fruit juice, because it’s easy to drink a large volume quickly. A single cup of prune juice delivers 707 mg of potassium. Orange juice has 496 mg per cup, and grapefruit juice has about 400 mg.
Berries are a reliable low-potassium alternative. Strawberries, raspberries, blueberries, and blackberries contain just 57 to 116 mg per half cup. Apples, grapes, and cranberries also fall on the lower end.
Vegetables With the Most Potassium
Potatoes, tomatoes, sweet potatoes, and cooked spinach top the list for vegetables. Cooked spinach is a particularly deceptive one: a half cup of raw chopped spinach has only 84 mg of potassium, but a half cup of boiled spinach jumps to 420 mg because the leaves shrink down and concentrate during cooking. Tomato sauce and tomato paste are similarly concentrated and can add potassium fast.
Lower-potassium green vegetables that make good substitutes include green beans, cabbage, broccoli, asparagus, Brussels sprouts, and okra. These let you fill your plate without blowing your daily limit.
Dairy and Protein Sources
Milk in any form is a meaningful source of potassium. A cup of 2% milk has about 448 mg, whole milk around 368 mg, and chocolate milk roughly 418 to 422 mg. A six-ounce container of plain low-fat yogurt has 398 mg, and fruit-flavored yogurt runs about 367 mg. Whey protein powder is especially concentrated, with some isolate formulas delivering 750 mg in just three scoops.
Most hard cheeses are considerably lower. Provolone has about 182 mg per cup diced, Muenster around 177 mg, and Parmesan about 180 mg per cup grated. If you love dairy but need to cut potassium, shifting from milk and yogurt toward small portions of cheese is a practical trade.
Nuts also add up. A cup of dry-roasted almonds has 984 mg, and a cup of dry-roasted peanuts has 926 mg. A tablespoon of almond butter is only about 120 mg, though, so small servings of nut butters are more manageable than handfuls of whole nuts.
Drinks That Add Up Fast
Beverages are easy to overlook because they don’t feel like “food,” but several common drinks are potassium-heavy. Carrot juice (689 mg per cup), tomato juice (557 mg), and orange juice (496 mg) are among the highest. Sports drinks, vegetable cocktail juices, and smoothies made with bananas or spinach can also push your intake up quickly.
Alcohol deserves a mention too. It doesn’t contain much potassium on its own, but it can raise blood potassium levels indirectly by damaging cells and impairing kidney function. Water, apple juice, cranberry juice, and lemonade are all lower-potassium drink options.
Hidden Potassium in Processed Foods
One of the trickiest sources of potassium is invisible: potassium chloride, a salt substitute used widely in processed and packaged foods. Manufacturers add it to reduce sodium while keeping a salty taste, and it’s now one of the most common sodium replacers in the food industry. You’ll find it in reduced-sodium soups, canned goods, frozen meals, deli meats, and snack foods. The word “potassium” won’t always jump out on the front label, so check the ingredient list for potassium chloride specifically.
“No salt” or “low sodium” table salt substitutes are almost entirely potassium chloride. If you’ve been using one to cut sodium, switch to herbs, spices, lemon juice, or vinegar for flavor instead.
Cooking to Reduce Potassium
You don’t have to eliminate every high-potassium vegetable if you’re willing to prep it differently. Boiling is the most effective method for pulling potassium out of food. Research on potatoes found that boiling cubed potatoes reduced their potassium content by about 50%, and boiling shredded potatoes cut it by roughly 75%. The key is cutting the food into small pieces to increase surface area, then boiling in a large pot of water and discarding the cooking water afterward.
Simply soaking vegetables in water (leaching without heat) did not significantly reduce potassium levels in the same research. So soaking alone isn’t enough. Boiling small pieces, draining thoroughly, and then preparing them however you like is the approach that actually works.
