Researchers have found that for several common dyes, the doses that affect behavior in children may be lower than what the FDA considers safe. Pop Tarts contain a synthetic preservative called TBHQ, which keeps fats from going rancid. At the small amounts found in food, it’s considered safe by regulatory agencies. The acceptable daily intake is set at up to 0.7 milligrams per kilogram of body weight.

The concern is about cumulative exposure. TBHQ shows up in a wide range of processed foods, from crackers to frozen pizza to fast-food chicken. A 2022 review in Toxicology Reports noted that long-term exposure at higher doses has produced troubling results in animal studies, including DNA damage in stomach, liver, and kidney cells, and precursors to stomach tumors. These effects were seen at doses well above what a single food product delivers, but if TBHQ appears in many items you eat throughout the day, the total intake can add up.

How Pop Tarts Compare to Other Breakfasts

Pop Tarts are sometimes lumped in with other “not great” breakfast choices like sugary cereals or muffins, but they’re closer to the bottom of the nutrition spectrum.
