The selected microorganism is grown in large bioreactors under controlled conditions, including optimized temperature, pH, and nutrient composition, to promote maximum enzyme production.
Two main fermentation methods are employed: submerged fermentation (SmF), where microbes grow in a liquid broth, and solid-state fermentation (SSF), where microbes grow on a solid material. SmF is common for high-volume production, while SSF suits certain fungi and can use inexpensive feedstocks. After fermentation, the enzyme is separated from the microbial cells and purified through steps like filtration, centrifugation, and chromatography.
Modern biotechnology, particularly genetic engineering, optimizes this production process. Scientists modify the host microorganism’s genetic material to increase enzyme yield or prevent unwanted byproducts. Genetic engineering also modifies the enzyme itself, enhancing characteristics like activity, stability at higher temperatures, or tolerance to varying pH levels, making the enzyme more robust for harsh industrial environments.

The food and beverage industry is a major consumer of industrial enzymes, using them to improve quality, texture, and yield. For example, Rennin (a protease) coagulates milk proteins in cheesemaking. Amylases break down starches into fermentable sugars in brewing, and carbohydrases convert starch into high-fructose corn syrup.
In the textile industry, enzymes refine fabric processing in an environmentally conscious way. Cellulases create the “stone-washed” look in denim by partially degrading cotton fibers, providing a softer feel without abrasive stones. Amylases are used for “desizing,” removing the starch-based coating applied to threads before weaving.
Biofuels rely on enzymes, particularly cellulases, to break down complex plant materials like lignocellulose into simple sugars that are fermented into ethanol. This enzymatic hydrolysis is a key step in utilizing non-food biomass, such as agricultural waste, to produce sustainable fuel sources.
