How Long Does MSG Stay in Your System: Hours or Days?

MSG is processed remarkably fast. Your body breaks down most of it before it even reaches your bloodstream, and any spike in blood glutamate levels typically returns to normal within two hours, even after a large dose. For most people eating a normal meal, MSG passes through the system so quickly it barely registers as a blip.

What Happens to MSG After You Eat It

When you swallow food containing MSG, the sodium splits off and the glutamate (an amino acid your body already uses constantly) heads to your gut lining. This is where the real story happens: about 95% of the glutamate you eat is metabolized by the cells lining your intestines. Of that amount, roughly half gets converted into carbon dioxide, which you simply breathe out. The rest fuels other metabolic processes in your gut cells or gets converted into different amino acids your body can use.

This means very little dietary glutamate actually makes it into your general circulation. Your intestines act as a massive filter, burning through glutamate as fuel before it has the chance to travel elsewhere. It’s one of the gut’s preferred energy sources, so the cells there grab it aggressively.

Blood Levels Peak and Drop Within Hours

Under normal eating conditions, a meal with added MSG produces only a small, brief rise in blood glutamate. A typical serving of food with added MSG contains less than 0.5 grams, which is a modest amount your gut handles easily. Only when someone consumes a very large dose (more than 5 grams taken all at once on an empty stomach) does blood glutamate rise significantly. Even then, levels return to baseline within about two hours.

To put that in perspective, consuming more than 3 grams of MSG without food at one time is unlikely in any realistic eating scenario. So for the vast majority of meals, your blood glutamate level barely changes at all.

MSG and Your Brain

One reason people worry about MSG lingering in the body is concern about its effect on the brain. Glutamate is a neurotransmitter, and too much of it in brain tissue could theoretically cause problems. But the blood-brain barrier tightly restricts how much glutamate crosses from the bloodstream into the brain. Under normal conditions, the brain produces most of its own glutamate internally from other building blocks. The barrier maintains brain glutamate levels independently of what’s circulating in your blood, so a temporary bump from a meal doesn’t translate into a flood of glutamate in your brain.

What About MSG Sensitivity Symptoms?

Some people report headaches, flushing, tingling, numbness, or a feeling of drowsiness after eating MSG. These reactions have been documented after consuming 3 grams or more without food, and when they do occur, they’re generally mild and resolve on their own in a short time. The onset is typically within an hour or so of eating, and the symptoms fade as your body clears the glutamate from your bloodstream, which as noted takes roughly two hours at most.

The FDA classifies MSG as “generally recognized as safe.” A review by the Federation of American Societies for Experimental Biology concluded the same, noting that any symptoms tend to be transient and limited to people who are particularly sensitive and who consume unusually large amounts on an empty stomach.

Where MSG Ends Up

There’s no long-term storage of MSG in your body. Unlike fat-soluble compounds that can accumulate in tissue over time, glutamate is water-soluble and gets used up quickly. The main exit routes are straightforward: most of it becomes carbon dioxide in your gut and leaves through your lungs. A smaller portion gets converted into other amino acids or enters normal protein metabolism in the liver. Some byproducts are filtered by the kidneys and leave in urine. The liver also processes related metabolites, adjusting pathways involved in energy production and amino acid balance.

By the time a few hours have passed after your meal, there’s essentially no trace of the MSG you consumed that’s distinguishable from the glutamate your body produces and recycles on its own every day. Your body naturally contains about 40 grams of free glutamate at any given time, so the small amount from a meal with added MSG is a drop in a very large bucket.
