How Many People Die from Food Poisoning Each Year?

Foodborne illness kills roughly 420,000 people worldwide every year, according to the World Health Organization. In the United States, the CDC estimates that 48 million people get sick from contaminated food annually, 128,000 are hospitalized, and about 3,000 die. Those numbers make food poisoning far deadlier than most people assume.

Global Deaths and Who They Affect

Nearly one in ten people on Earth gets sick from contaminated food each year, and the burden falls hardest on the most vulnerable. Of the 420,000 annual deaths globally, roughly 125,000 are children under the age of five. That means children under five account for about 30% of all foodborne deaths despite making up only 9% of the world’s population.

The majority of these child deaths come from foodborne diarrheal diseases, which sicken an estimated 220 million children and kill 96,000 of them each year. In regions with limited access to clean water, refrigeration, and medical care, a case of food poisoning that would resolve on its own in a wealthy country can become fatal within days from dehydration alone.

Deaths in the United States

The 3,000 annual deaths in the U.S. represent a small fraction of the 48 million total illnesses. For context, that’s roughly one death for every 16,000 cases, or about one death for every 43 hospitalizations. The vast majority of food poisoning episodes resolve without medical care, but the cases that turn serious can escalate quickly.

These numbers are estimates rather than exact counts. Only a fraction of foodborne illnesses are ever diagnosed and reported to public health authorities, so the CDC uses statistical models to project the true burden. The actual toll could be somewhat higher or lower in any given year.

The Deadliest Pathogens

Not all foodborne bacteria and viruses are equally dangerous. Among the seven major pathogens the CDC tracks in the U.S., Salmonella is the leading killer, responsible for an estimated 238 deaths per year out of roughly 1.35 million annual infections. That makes Salmonella relatively common but still lethal in a small percentage of cases, particularly in vulnerable populations.

Listeria is far rarer but far more deadly on a case-by-case basis. It causes about 172 deaths per year in the U.S. and has a fatality rate of roughly 20%, meaning one in five people who develop a serious Listeria infection dies. For comparison, most foodborne pathogens kill a tiny fraction of a percent of the people they infect. Listeria is particularly dangerous for pregnant women, older adults, and anyone with a weakened immune system.

The other pathogens responsible for the most deaths include Campylobacter, norovirus, and Toxoplasma. Together, all seven major tracked pathogens account for an estimated 931 deaths and 53,300 hospitalizations per year. The remaining deaths, up to the 3,000 total, come from less common pathogens, unidentified organisms, and toxins.

How Food Poisoning Becomes Fatal

Most food poisoning kills through a handful of pathways. The most straightforward is severe dehydration from prolonged vomiting and diarrhea, which is especially dangerous in young children and older adults whose bodies have less margin for fluid loss. In low-resource settings, this is the primary mechanism behind the vast majority of deaths.

In more serious infections, bacteria can cross from the gut into the bloodstream, seeding infections in other organs. Listeria, for example, can reach the brain and heart valves, causing meningitis or infection of the heart lining. Certain strains of E. coli produce toxins that damage the kidneys, sometimes triggering a condition called hemolytic-uremic syndrome that can cause kidney failure. Botulism, caused by toxins from Clostridium botulinum, paralyzes muscles progressively downward through the body and can stop breathing entirely without medical intervention.

In each of these scenarios, what starts as a stomach bug crosses a threshold where the body can no longer contain the infection or compensate for the damage. Organ failure, overwhelming infection in the blood, and respiratory collapse are the final common pathways.

Who Is Most at Risk of Dying

Four groups face significantly higher odds of both getting food poisoning and dying from it: young children, older adults, pregnant women, and people with weakened immune systems.

  • Children under five are vulnerable because their immune systems are still developing and cannot fight off infections as effectively as older children or adults. Their small body size also means dehydration sets in faster.
  • Older adults face increased risk because the immune system becomes less efficient at recognizing and clearing harmful bacteria with age. The gut also slows down, giving pathogens more time to multiply.
  • Pregnant women experience immune system changes that make them more susceptible to certain infections. Listeria is particularly concerning during pregnancy because it can cause miscarriage, premature delivery, or stillbirth even when the mother’s symptoms are mild.
  • People with chronic conditions like diabetes, HIV/AIDS, cancer, or organ transplants often have immune systems weakened by their disease or its treatment. Diabetes can also slow digestion, giving foodborne bacteria more opportunity to multiply before the body clears them.

For healthy adults in their twenties through fifties, the risk of dying from food poisoning is extremely low. The 3,000 annual deaths in the U.S. are concentrated heavily among these vulnerable groups, which is why the same contaminated meal can cause mild discomfort in one person and a life-threatening illness in another.

Putting the Numbers in Perspective

A one-in-16,000 chance of death per illness episode sounds small, and for most people it is. But the sheer volume of food poisoning cases means those small odds produce a significant death toll. In the U.S., foodborne illness kills more people annually than residential fires. Globally, the 420,000 annual deaths exceed the toll of malaria in some estimates.

The gap between the global death toll and the U.S. figure reflects differences in food safety infrastructure, access to clean water, refrigeration, and medical care. In wealthy countries, most food poisoning is an unpleasant few days. In lower-income regions, the same pathogens kill children by the tens of thousands because oral rehydration therapy and basic medical support aren’t always available in time.
