Easy Ways to Get More Potassium From Spinach

If your goal is to maximize potassium, cooked spinach is the clear winner. Sautéing a large handful of fresh spinach for a few minutes gives you a concentrated serving without much effort. Adding it to soups, stews, or pasta dishes works the same way, since the leaves cook down and you end up consuming more per bite than you would in a salad.

If you prefer raw spinach, quantity matters. A typical salad might use two or three cups of leaves, which brings you closer to 350 to 500 mg of potassium. Blending raw spinach into smoothies is another approach, since you can easily fit two or three cups into a single drink without noticing the texture or taste.

Keep in mind that boiling spinach and discarding the cooking water will leach some potassium out. If you want to retain the most, sautéing or steaming with minimal water is more efficient.
