That’s roughly 80% of butter’s total fat content, making it one of the most concentrated sources of saturated fat in the average diet. A single tablespoon delivers more than half the daily saturated fat limit recommended by the American Heart Association.
Saturated Fat Per Serving Size
A standard tablespoon of salted butter weighs 14 grams and contains 11.5 grams of total fat, 7 of which are saturated. The remaining fat is split between monounsaturated and small amounts of polyunsaturated fat. That tablespoon carries 102 calories, and nearly all of them come from fat.
Scaling up, a standard stick of butter (half a cup, or about 113 grams) contains roughly 58 grams of saturated fat. A full 100-gram portion holds about 51 grams. For context, a pat of butter, the small square you might get at a restaurant, is typically about 5 grams and contains around 2.5 grams of saturated fat.
What Types of Saturated Fat Butter Contains
Not all saturated fat is identical. Butter contains a mix of different saturated fatty acids, each with a different chain length. The dominant one is palmitic acid, which makes up roughly 26 to 35% of butter’s total fatty acids. This is the same type of saturated fat abundant in palm oil and red meat, and it’s the one most strongly linked to raising LDL cholesterol.
Stearic acid accounts for about 8 to 12% of the total. It behaves differently in the body than palmitic acid and has a more neutral effect on cholesterol levels. Myristic acid contributes another 10 to 12%, and research suggests it may also raise LDL, though less potently than palmitic acid.
Butter is also unusual among common fats because it contains meaningful amounts of short-chain fatty acids. Butyric acid makes up about 2 to 3% of butter’s fat. Your gut bacteria produce this same compound during fiber digestion, and it plays a role in maintaining the lining of the intestines. Butter also contains smaller amounts of other short-chain fats like caproic, caprylic, capric, and lauric acid, together adding another 7 to 11%.
How One Tablespoon Fits Into Daily Limits
The American Heart Association recommends keeping saturated fat below 6% of total daily calories. On a 2,000-calorie diet, that works out to about 13 grams per day. A single tablespoon of butter uses up roughly 7 of those 13 grams, leaving very little room for saturated fat from other sources like cheese, meat, or baked goods.
This is where butter’s impact on the diet becomes clear. Most people don’t eat butter in isolation. A piece of toast with butter, a pan-fried egg, and a glass of whole milk at breakfast can easily push you past the full daily limit before lunch. If you cook with butter regularly or use it in baking, the totals climb quickly.
How Butter Affects Cholesterol
In controlled feeding studies, butter consistently raises total and LDL cholesterol compared to plant-based spreads. A clinical trial published in The American Journal of Clinical Nutrition found that when participants switched from butter to margarine (with both providing the same percentage of calories from fat), total cholesterol dropped 3.5 to 5.4% and LDL cholesterol dropped 4.9 to 6.7%. HDL cholesterol and triglycerides stayed the same regardless of which fat people ate.
These shifts are moderate for any single person, but at a population level, sustained differences in LDL cholesterol translate into meaningful differences in cardiovascular risk over time. The effect is driven primarily by the palmitic and myristic acid in butter replacing unsaturated fats that would otherwise lower LDL.
Grass-Fed Butter vs. Regular Butter
Grass-fed butter has a slightly different fat profile than conventional butter. It tends to contain more omega-3 fatty acids and a somewhat higher proportion of unsaturated fat. The yellow color is deeper because pasture-raised cows consume more beta-carotene from grass.
That said, both types still contain roughly the same total amount of saturated fat per tablespoon. Grass-fed butter is not a low-saturated-fat alternative. The differences are real but marginal, and they don’t change the basic math of how much saturated fat you’re getting per serving.
How Ghee Compares
Ghee, or clarified butter, is butter with the water and milk solids removed, leaving pure butterfat. Because it’s more concentrated, ghee contains slightly more fat and more saturated fat per serving than regular butter. One teaspoon of ghee has 5 grams of total fat and 3 grams of saturated fat, compared to 4 grams total fat and 2 grams saturated in the same amount of regular butter. Per tablespoon, ghee delivers roughly 8 to 9 grams of saturated fat versus butter’s 7 grams.
Ghee has a higher smoke point, which makes it more practical for high-heat cooking, and it’s free of the milk proteins that cause problems for people with dairy sensitivities. But from a saturated fat standpoint, it’s slightly more concentrated than the butter it’s made from.
Seasonal Variation in Butter Fat
Butter’s fatty acid composition isn’t fixed. It shifts depending on what the cows eat and the time of year. Research from Poland found that palmitic acid content ranged from 25.7% in summer to 34.6% in winter and early spring, when cows are more likely to eat stored feed rather than fresh pasture. Summer butter, made when cows graze on grass, tends to have slightly more unsaturated fat and a softer texture straight from the refrigerator. Winter butter is harder and somewhat higher in saturated fat overall.
