To calculate calories in homemade food, you weigh each raw ingredient, look up its calorie count in a food database, add all the ingredient calories together, then divide by the number of servings. The math itself is simple, but accuracy depends on weighing rather than measuring by volume, accounting for cooking changes like water loss and fat absorption, and being consistent about whether you’re tracking raw or cooked weights.
The Basic Method: Ingredient-by-Ingredient
Start with a kitchen scale. Measuring cups work for liquids, but for everything else, weight in grams is far more accurate. A “cup of rice” can vary by 30 grams or more depending on how tightly you pack it, while 185 grams of rice is always 185 grams of rice.
Weigh each ingredient before cooking, in the form you’re adding it to the recipe. If you peel and core an apple before adding it to a pie, weigh the peeled, cored apple. The USDA has published yield data showing that a Delicious apple loses about 19% of its weight to peeling and coring, so the distinction matters. For every ingredient, record the weight in grams.
Next, look up the calorie value per gram (or per 100 grams) for each ingredient. The most reliable free source is USDA FoodData Central (fdc.nal.usda.gov), which lists calories and full nutrient profiles for thousands of foods. Search for the ingredient in its raw form, since that’s what you weighed. The “SR Legacy” database is the most intuitive for home cooks working with whole ingredients, while “Branded Foods” covers packaged items. The site works best on a desktop computer, as mobile filtering is limited.
Multiply each ingredient’s weight by its calories per gram. Add all the totals. That number is the total calories for the entire recipe. Divide by the number of servings, and you have your per-serving count.
A Worked Example
Say you’re making a simple chicken stir-fry for four people:
- Chicken breast, raw: 500 g × 1.1 cal/g = 550 cal
- Broccoli, raw: 300 g × 0.34 cal/g = 102 cal

Why Cooking Changes the Math
Cooking doesn’t create or destroy calories, but it changes the weight of your food, which changes the calorie density per gram. This is where most home tracking errors happen.
Meat, poultry, and fish shrink about 25% when cooked, mostly from water and fat loss. Sixteen ounces of raw boneless chicken breast becomes roughly 12 ounces cooked. The calories stay nearly the same: 4 ounces of raw chicken breast has about 134 calories, and the 3 ounces of cooked chicken it becomes has about 139 calories. If you weigh your chicken raw and log the raw calorie value, you’re fine. If you weigh it after cooking, you need to use the cooked calorie value from the database, which is higher per gram because the water is gone.
Pick one approach and stick with it. Weighing raw is generally easier because packaged nutrition labels and most database entries default to raw values. If you weigh cooked food and log it against raw data, you’ll undercount. If you weigh raw food and log it against cooked data, you’ll overcount.
Accounting for Oil and Fat
When you sauté or fry, not all the oil in the pan ends up in your food. Some stays behind. But a meaningful amount does get absorbed, and oil is the most calorie-dense ingredient in most home kitchens at nearly 9 calories per gram.
Foods fried at normal temperatures (325 to 375°F) absorb between 8% and 25% of the frying oil, depending on the food’s surface area, moisture content, and how long it cooks. Breaded or battered items absorb more. Dense proteins absorb less. French fries absorb roughly 8% of the oil they’re fried in, while items with more surface area or porous coatings land closer to 25%.
For shallow frying or sautéing, a practical approach is to measure the oil you put in the pan, then after cooking, blot or pour out what remains and measure that. The difference is what your food absorbed. If you added 2 tablespoons (28 g) and about a third is left in the pan, your food absorbed roughly 19 g of oil, or about 168 calories. This won’t be perfectly precise, but it’s far better than either ignoring the oil or counting all of it.
Handling Soups, Stews, and Baked Goods
Recipes that simmer for a long time lose water to evaporation. A pot of soup that starts with 3,000 grams of ingredients might weigh 2,400 grams after an hour of simmering. The calories haven’t changed, but they’re now concentrated into less volume. This is why weighing the finished dish matters for portioning.
After cooking, weigh the entire finished dish (subtract the weight of the pot). Divide the total recipe calories by the total cooked weight in grams. That gives you a calorie-per-gram figure for the finished food. Then weigh your individual serving and multiply. This method works for anything where ingredients are mixed together and hard to separate: chili, casseroles, pasta bakes, curries.
For baked goods, the same principle applies. A cake batter that weighs 1,200 grams raw might weigh 1,050 grams after baking due to moisture loss. If the total batter was 4,800 calories, each gram of finished cake contains about 4.57 calories. A 75-gram slice would be roughly 343 calories.
Tools That Speed Up the Process
Doing this math from scratch every time is tedious. Several free apps and websites let you enter a recipe’s ingredients, pull calorie data automatically, and save the recipe for reuse. MyFitnessPal, Cronometer, and Lose It all have recipe builder features where you input ingredients by weight, set the number of servings, and get a per-serving calorie breakdown. Cronometer pulls directly from USDA data, which tends to be more accurate than user-submitted entries.
If you use an app with a barcode scanner, scan packaged ingredients (canned beans, pasta, sauces) directly for the most accurate match. For whole foods like vegetables and raw meat, search manually and select the USDA-sourced entry rather than a user-submitted one, which may have errors.
Common Mistakes That Throw Off Your Count
The biggest source of error is not weighing at all. Eyeballing portions can be off by 50% or more, especially with calorie-dense foods like nuts, cheese, oil, and grains. A “tablespoon” of peanut butter scooped loosely can easily be double the 16-gram serving listed on the label.
Other common mistakes: forgetting to count cooking oil, using volume measurements for dry ingredients, confusing raw and cooked database entries, and not accounting for marinades or sauces. If you marinate chicken and discard the leftover marinade, you don’t count the full marinade’s calories. A reasonable estimate is that meat absorbs 10 to 20% of a thin marinade.
Even with careful tracking, expect some margin of error. Nutrition labels themselves are allowed to be off by up to 20% under FDA rules, and natural variation in produce and meat means two chicken breasts of the same weight won’t have identical calorie counts. Home calorie tracking done well is probably accurate within 10 to 15%, which is more than precise enough for managing your intake over time. Consistency in your method matters more than chasing perfect accuracy on any single meal.
