Freeze-drying is the primary method used to dehydrate breast milk, and it preserves the milk’s nutritional content better than other drying techniques. You can’t safely or effectively dehydrate breast milk using a standard food dehydrator or oven. The process requires either a home freeze-dryer or a commercial service that specializes in breast milk preservation. Here’s what you need to know about each option, what happens to the milk during the process, and how to handle the powder safely.
Why Freeze-Drying Is the Only Practical Method
Breast milk contains fats, proteins, sugars, antibodies, and other bioactive compounds that are sensitive to heat. A food dehydrator or conventional oven applies direct heat to remove moisture, which damages proteins and destroys protective compounds in the milk. Spray drying, the method used for commercial infant formula, also involves heat and has not been widely adopted for breast milk because of concerns about protein breakdown during the process.
Freeze-drying works differently. It freezes the milk solid, then uses a vacuum to pull moisture out as vapor, skipping the liquid phase entirely. This low-temperature process keeps the milk’s structure largely intact. A study published in the journal Breastfeeding Medicine found that freeze-dried breast milk retained its proteins, fats, polyphenols (protective plant-like compounds), and markers of oxidative integrity. Glucose levels dropped slightly, but the overall nutritional profile stayed remarkably close to fresh milk.
Using a Home Freeze-Dryer
Home freeze-dryers are countertop or floor-standing machines that cost between $2,000 and $5,000. They work by freezing food on trays inside a sealed chamber, then creating a vacuum that causes ice to sublimate directly into water vapor. A typical batch of breast milk takes 24 to 40 hours to fully dry, depending on the volume and the machine’s capacity.
To freeze-dry breast milk at home, pour expressed milk into the trays in a thin, even layer, no more than about half an inch deep. Thicker layers take significantly longer and may not dry completely, which creates a moisture problem that can allow bacteria to grow. Once the cycle finishes, the milk will be a dry, crumbly solid that you can crush into powder. Store the powder in airtight, moisture-proof bags or jars with oxygen absorbers. Properly sealed freeze-dried breast milk can last months at room temperature, compared to six to twelve months in a deep freezer for liquid milk.
Sanitation matters at every step. Wash your hands, sanitize the trays, and work on clean surfaces when handling the powder. Any moisture or contamination introduced after drying defeats the purpose of preservation.
Commercial Freeze-Drying Services
Several companies now offer mail-in breast milk freeze-drying. You ship your frozen milk to them, and they return it as labeled, portioned powder. Prices typically range from $1 to $3 per ounce of liquid milk processed, plus shipping costs for insulated packaging.
The FDA regulates donor human milk under its authority for foods, applying the same manufacturing and safety rules (known as Current Good Manufacturing Practice) that govern other food products. However, the agency does not specifically certify or approve individual breast milk freeze-drying services. If a company modifies the milk by adding vitamins, minerals, or extra protein, the product could fall under exempt infant formula regulations, which carry additional requirements. When choosing a service, look for companies that process each mother’s milk separately, test for contamination, and provide clear documentation of their handling procedures.
What Survives the Process
The main reason parents freeze-dry breast milk is to preserve its unique benefits in a shelf-stable form. The research is encouraging on macronutrients: proteins, fats, and most sugars come through the process with minimal loss. Polyphenols, which have antioxidant properties, also survive well.
Bioactive compounds like lactoferrin, a protein that helps fight infection, can be preserved through freeze-drying, though some structural changes occur during processing. The extent of those changes depends on the specific conditions used, including temperature, vacuum pressure, and how quickly the milk is frozen before drying. Human milk oligosaccharides (complex sugars that feed beneficial gut bacteria) are generally more heat-stable, but dedicated research on their survival through home freeze-drying specifically is still limited.
One area where data is less clear is immunoglobulin A (IgA), the antibody in breast milk that protects a baby’s gut lining. While freeze-drying is gentler than heat-based methods, the available studies on breast milk haven’t reported specific IgA retention numbers. If preserving immune factors is your primary goal, keeping milk frozen in a deep freezer remains the most well-studied option.
Reconstituting and Handling the Powder
To use freeze-dried breast milk, you add water back to the powder. Most services and home freeze-dryer manufacturers recommend using distilled or previously boiled water, mixed at the ratio specified for the batch (typically listed on the label or calculated based on original volume). Stir or shake gently until fully dissolved. The reconstituted milk should look and feel similar to the original, though some fat separation is normal.
Powdered milk of any kind is not sterile. Cronobacter, a rare but serious bacterium, can contaminate dry milk products and the surfaces they touch. The CDC recommends keeping all feeding equipment, scoops, and prep surfaces thoroughly clean and dry. Never set scoops on countertops or in sinks, and close containers of powder immediately after use. For infants under two months, premature babies, or immunocompromised infants, the CDC advises mixing powdered products with water that has been boiled and cooled for no longer than five minutes, to kill potential bacteria while the water is still hot enough.
Once reconstituted, treat the milk like fresh expressed milk. Use it within two hours at room temperature, or refrigerate immediately and use within 24 hours. Discard anything your baby doesn’t finish from a feeding.
When Freeze-Drying Makes Sense
Freeze-drying is most practical for parents who have a large oversupply and are running out of freezer space, those who travel frequently and need a portable option, or those preparing an emergency stash that doesn’t depend on electricity. The powder is lightweight, compact, and doesn’t require cold storage until it’s reconstituted.
It’s less practical if you’re producing just enough milk for daily feedings, since the process adds time and cost without changing the nutritional outcome compared to fresh or properly frozen milk. A standard deep freezer keeps breast milk safe for six to twelve months, which covers most breastfeeding timelines without the need for special equipment. Freeze-drying fills a specific niche: long-term, shelf-stable preservation when freezer storage isn’t enough or isn’t available.
