How to Make Structured Water: 4 Proven Methods

Structured water is made by treating regular water with vortexing, magnets, infrared light, or mineral contact to encourage a more ordered molecular arrangement. The methods are simple and inexpensive, though you should know upfront that the science behind structured water is still contested. Some animal studies show promising results, but no one has confirmed how (or whether) these techniques change water in a way that meaningfully affects human health.

Here’s what each method involves, what the research actually shows, and what to watch out for.

What “Structured Water” Means

The concept comes from research on what scientists call exclusion zone (EZ) water, a layer of water that forms near certain surfaces and behaves differently from the bulk water around it. Gerald Pollack, a biophysicist at the University of Washington, proposed that this water arranges itself into hexagonal sheets with a structure somewhere between liquid water and ice. His lab found that this zone carries a negative charge (between -120 and -200 millivolts) and has a higher refractive index of 1.46 compared to regular water’s 1.33, meaning it bends light differently.

That said, a critical review of EZ research found that neutron radiography doesn’t support the idea of a denser water phase, and X-ray crystallography and neutron scattering studies suggest the internal structure of the water itself remains unchanged. The observed effects may be explained by enhanced surface tension rather than a fundamentally different molecular arrangement. This is the core tension in the structured water space: something measurable is happening near certain surfaces, but scientists disagree about what it is.

Vortexing: The Simplest Method

Vortexing means stirring water rapidly to create a spinning funnel shape. The idea is that this mimics the natural spiral motion water follows in rivers and streams, encouraging molecular ordering.

The easiest approach is to wrap coiled copper wire around a stick or dowel and stir your water vigorously for about 30 seconds. Copper spoons designed specifically for this purpose are also available. For a more hands-off method, you can place small magnets inside a funnel so that water spirals as it passes through. Commercial vortexing devices exist too, though they range from $30 gadgets to $300+ countertop units.

There’s no peer-reviewed research establishing a specific RPM or duration that produces a measurable change in water structure. The 30-second guideline comes from practitioners rather than lab data.

Infrared Light Exposure

Infrared light is the most scientifically documented method for expanding the EZ layer in water. In lab experiments, mid-infrared light at a wavelength of 3.0 micrometers expanded the exclusion zone by 41% after just five minutes of exposure. Near-infrared light between 810 and 870 nanometers produced similar expansion, though it required considerably higher intensity.

In practical terms, this means placing water near an infrared light source. Near-infrared heat lamps (the kind sold for therapeutic use or even reptile terrariums) emit wavelengths in the right range. Sunlight also contains infrared radiation, which is why some structured water advocates recommend setting water in direct sunlight for 30 minutes to several hours. The key variable is intensity: lab experiments used focused light sources, so casual sunlight exposure would likely produce a smaller effect.

Magnetic Treatment

Passing water through or past magnets is one of the more widely studied methods, particularly in animal research. Studies have used magnets rated at 1,200 to 3,600 gauss (a unit of magnetic strength). In rabbit studies, water treated with a 1,200 gauss magnet led to improvements in blood lipid profiles and reproductive outcomes compared to untreated water. Interestingly, stronger magnets didn’t always produce better results. The 1,200 gauss treatment outperformed the 3,600 gauss treatment in some measures.

To try this at home, you can attach neodymium magnets to the outside of a water container or build a simple flow-through system where water passes between two magnets. The magnets don’t need to contact the water directly.

Mineral Contact

Some people place crystals like quartz or minerals like shungite (a carbon-rich stone from Russia) in water to structure it. The typical recommendation is to submerge the mineral for two to three days before drinking.

Shungite does have documented adsorption properties, meaning it can pull organic compounds and some heavy metals out of water. However, research published in the Journal of Water and Health found a significant downside: shungite releases nickel, copper, lead, cadmium, zinc, chromium, and arsenic into the water. Lead and cadmium exceeded safe limits during the first three days of contact, and nickel continued leaching for up to two weeks.

If you want to use shungite, the research recommends washing it extensively first. Soak the stones in a 1:10 ratio of shungite to water, changing the water once daily for at least five days before using it for drinking water. Even then, contamination risk remains. Quartz is chemically inert and doesn’t carry the same heavy metal concerns, though there’s less published research on its effects on water structure specifically.

How Long Structured Water Lasts

Stability is one of the biggest practical questions, and the answer depends on the method. Water treated with magnets or vortexing is stable for a relatively short period, typically hours and no more than three days. This means you’d need to treat water fresh rather than making large batches.

There is one exception. A type of structured water developed by treating purified water with trace amounts of potassium and silica (about 0.1% by weight), combined with magnetic and light energy, has been shown to retain significant structuring for up to 3.5 months. In testing, this water maintained its properties even after being boiled in a microwave for five minutes. This particular formulation is commercially produced and not easily replicated at home.

For DIY methods, your best bet is to prepare structured water shortly before you plan to drink it and store it away from electromagnetic interference in glass containers rather than plastic.

What the Animal Research Shows

No clinical trials have tested structured water’s health effects in humans, so the evidence base comes entirely from animal studies. Across three or more studies, animals consuming structured water for one month or longer showed consistent patterns: faster growth rates, reduced markers of oxidative stress, improved blood sugar and insulin responses in diabetic animals, better blood lipid profiles, and increased tissue conductivity.

A study on racehorses found that drinking 10 liters of structured water daily for four weeks increased whole-body hydration and improved upper airway health, with less mucus and swelling visible on post-exercise endoscopy. Diabetic rats drinking structured water gained about 30% less weight than those drinking regular water, suggesting a possible increase in metabolic rate. In a small human observation of people with type 2 diabetes and blood sugar above 8 mmol/L, structured water was associated with increased cellular hydration measured through bioelectrical impedance.

These findings are genuinely interesting, but the critical caveat is that no one has identified the mechanism. As one review put it plainly: “The mechanisms by which structured water affects biological systems are unknown.” It also remains unproven that water you structure at home retains its properties through your digestive system or that the structuring of water inside and around your cells can be influenced by what you drink.

A Practical Summary of Methods
