How to Make Whey Protein at Home: Step by Step

You can make liquid whey protein at home by separating it from milk using an acid like lemon juice or vinegar, then straining the curds. The process takes about 30 minutes of active work, and one gallon of milk yields a surprisingly large amount: whey makes up 80 to 90 percent of the total milk volume, so you’ll get roughly 3 to 3.5 quarts of protein-rich liquid from a single gallon.

What you won’t get is the powdered whey protein you’d buy in a tub at the store. Commercial whey protein powder goes through industrial ultrafiltration and spray-drying that isn’t replicable in a home kitchen. But liquid whey is the same foundational ingredient, packed with protein, B vitamins, and minerals, and it’s genuinely useful in cooking, smoothies, and fermentation.

What You Need

The ingredient list is short: whole milk and an acid. You can use fresh lemon juice (about 1/4 cup per gallon of milk), white vinegar in the same amount, or plain yogurt with live cultures if you’d prefer a slower, fermentation-based separation. Whole milk gives you the most protein-rich whey, though 2% works too. Ultra-pasteurized milk is less reliable because the high heat treatment changes how the proteins clump together.

For equipment, you need a large pot, a thermometer (a basic kitchen or candy thermometer is fine), a colander, and cheesecloth or a fine-mesh strainer. If you’re using cheesecloth, fold it into at least three or four layers. Tighter weaves retain more of the solid curds, keeping your whey cleaner. A fine-mesh nut milk bag also works well.

The Separation Process Step by Step

Pour the milk into a large pot and heat it slowly over medium heat until it reaches about 180°F (82°C). Stir occasionally to prevent scorching on the bottom. You don’t want a full boil, just gentle steam rising from the surface.

Remove the pot from heat and stir in your acid. Within a minute or two, you’ll see the milk begin to separate into white clumps (curds) floating in a yellowish-green liquid (whey). This happens because the acid drops the milk’s pH, causing the casein proteins to lose their electrical charge and clump together. The whey proteins stay dissolved in the liquid. If you don’t see clear separation after a few minutes, add another tablespoon of acid and stir gently.

Let the pot sit undisturbed for 10 to 15 minutes. This resting period allows the curds to firm up and separate more completely.

Line your colander with cheesecloth and set it over a large bowl. Pour the contents of the pot through the colander slowly. The liquid that collects in the bowl is your whey. Let it drain for at least 20 to 30 minutes. You can gently press the curds with a spoon to extract more liquid, but don’t squeeze too hard or you’ll push curd particles through the cloth.

The Yogurt Straining Method

If you’d rather skip the stove entirely, you can extract whey by straining plain, full-fat yogurt (Greek yogurt already has most of its whey removed, so use regular). Line a colander with cheesecloth, spoon in the yogurt, and let it drain in the refrigerator for 8 to 12 hours. The liquid that drips out is acid whey, slightly tangier than the heat-and-acid version but equally useful. The thick yogurt left behind is essentially homemade labneh, a creamy Middle Eastern cheese spread, so nothing goes to waste.

Whey from yogurt straining tends to be cloudier and may contain small yogurt solids. This affects both taste and shelf life, so keep that in mind for storage.

Protein Content of Homemade Whey

Liquid whey contains roughly 1 to 2 grams of protein per cup. That’s far less concentrated than commercial whey powder, which packs 20 to 30 grams per scoop. The difference is entirely about concentration: the powder has had nearly all the water removed and the protein isolated through filtration membranes with pore sizes measured in fractions of a micron, well beyond what kitchen equipment can achieve.

To get meaningful protein from homemade whey, you’ll want to use it in volume. Replacing water with whey in recipes that call for several cups of liquid (bread dough, soup, rice) is the most practical approach. Using it as a smoothie base instead of water adds protein along with calcium and potassium without changing the flavor much.

How to Store It

Clear liquid whey, with no visible yogurt solids, keeps in an airtight container in the refrigerator for up to six months. It also freezes well for the same duration. Ice cube trays work nicely for freezing whey in small portions you can toss into smoothies or recipes as needed.

Cloudy whey that contains yogurt solids is a different story. It only lasts about two weeks in the fridge, roughly the same shelf life as the yogurt it came from. If your whey smells sour or develops an off-putting odor beyond its normal mild tanginess, discard it.

What to Do With Liquid Whey

Most people end up with more whey than they expected, so having a plan helps. The most versatile use is as a liquid substitute in baking. Replace water or milk in bread, pancake batter, muffins, or pizza dough with an equal amount of whey. The natural acidity and residual proteins improve the rise and create a softer crumb.

Whey is also rich in lactobacilli, the beneficial bacteria that drive fermentation. Adding a splash to homemade sauerkraut, pickles, or kimchi jumpstarts the process and adds probiotics. For smoothies, use whey as the base liquid instead of water or milk for a modest protein bump and a slightly tangy flavor that pairs well with berries and banana.

If you still have excess, dilute it with water at a 1:10 ratio and use it to water acid-loving plants like tomatoes, strawberries, and blueberries. The calcium, phosphorus, and magnesium in whey act as a mild fertilizer.

Don’t Toss the Curds

The solid curds left in your cheesecloth are fresh cheese. Sprinkle them with salt, press them lightly, and you have a simple farmer’s cheese or paneer. The texture depends on how firmly you press: light pressure gives you a crumbly ricotta-style cheese, while heavy pressing under a weight for an hour or two creates firm blocks you can slice or pan-fry. One gallon of milk typically produces about one to one and a half pounds of fresh cheese alongside all that whey.
