Cooking method alters how much energy your body can extract: boiled potatoes and fried potatoes made from the same raw potato will deliver different usable calories, partly because of added fat and partly because heat changes starch structure in ways that affect digestion.
Your body also doesn’t process all foods with equal efficiency. Highly processed foods tend to deliver more of their labeled calories because the mechanical and chemical processing has already done some of the digestive work for you.
