You can’t lower the amount of lipase your body naturally produces in breast milk, but you can stop the enzyme from changing the taste of stored milk. The most reliable method is scalding freshly expressed milk before refrigerating or freezing it. This deactivates lipase before it has a chance to break down fats, which is what causes that soapy or metallic flavor many parents notice in thawed milk.

High lipase isn’t a medical condition or a problem with your milk. It simply means the fat-digesting enzyme in your milk is especially active, and it changes the taste of stored milk faster than usual. Understanding why it happens gives you practical options for dealing with it.

Why Stored Milk Tastes Different

Breast milk naturally contains lipase, an enzyme that breaks down fats into free fatty acids and glycerol. In fresh milk, the fats exist as tiny globules wrapped in a protective membrane that keeps them separated from lipase. When milk is frozen, the fat globules crystallize and that protective membrane gets damaged, exposing the fats directly to the enzyme. This triggers a process called lipolysis, where fats break down rapidly.

As free fatty acids accumulate, the milk develops an off flavor. Short and medium-chain fatty acids (the smaller fat molecules) are the main culprits behind a rancid taste, while lauric acid specifically contributes the soapy quality many parents describe. This process is gradual. Refrigerated milk may stay stable for a few days, but frozen milk shows a significant increase in acidity by about three months of storage due to ongoing lipase activity.

The important thing to know: this milk is still safe. The taste change is a cosmetic issue, not a safety one. Babies who will drink it can continue to have it. The problem is that many babies refuse it outright.

How to Test Your Milk

Before committing to a scalding routine, it helps to confirm that lipase is actually the issue. Express a small amount of milk and store it in the refrigerator. Smell and taste it at 12 hours, 24 hours, and 48 hours. If the milk develops a soapy, metallic, or slightly rancid smell within that window, you likely have high lipase activity. This baseline test also tells you roughly how much time you have between pumping and when the flavor changes, which is useful for planning.

If the milk smells fine refrigerated but tastes off only after freezing, that’s consistent with what the research shows: freezing damages the fat globule membranes and accelerates the breakdown. Some parents find their milk is perfectly fine in the fridge for a couple of days but unacceptable after being frozen.

Scalding: The Most Effective Prevention

Scalding is the standard recommendation for deactivating lipase before storage. Heat kills the enzyme, which stops fat breakdown in its tracks. Here’s how to do it:

  • Heat freshly expressed milk in a small saucepan over medium heat until it reaches 180°F (82°C). You’ll see tiny bubbles forming around the edges of the pan. Do not let it reach a full rolling boil.
  • Remove the milk from heat immediately once you see those edge bubbles.
  • Cool it quickly by placing the saucepan in a bowl of ice water or cold water. The faster you cool it, the more nutrients you preserve.
  • Transfer to storage bags or containers and refrigerate or freeze as usual.

Timing matters. Scald the milk as soon as possible after pumping. If your test showed flavor changes starting at 12 hours, you want to scald well before that window. Many parents build scalding into their pumping routine, heating the milk right after each session.

The tradeoff is that scalding does reduce some of the immune and nutritional properties of breast milk. Heat affects certain antibodies and vitamins. But scalded breast milk still retains significant nutritional value, and it’s a far better option than having a baby refuse the milk entirely or switching to formula if that’s not your preference.

Storage Practices That Slow Flavor Changes

If scalding feels like too much work for every session, a few storage strategies can buy you time. Refrigerated milk stays more stable than frozen milk because the fat globule membranes remain intact when they aren’t subjected to ice crystal formation. If you plan to use expressed milk within a day or two, refrigeration alone may be enough to avoid noticeable flavor changes, depending on how active your lipase is.

Freezer temperature also plays a role. Research has shown that freezing milk at -80°C (-112°F), which requires a deep laboratory-style freezer, produces less odor change than conventional home freezing at around -19°C (about 0°F). Most people don’t have access to ultra-cold freezers, but if you do (some workplaces or universities have them), it’s worth considering. For standard home freezers, using the milk sooner rather than later limits the amount of fat breakdown. Milk frozen for a few weeks will generally taste better than milk frozen for three months.

What About Pumping Technique?

Some parents report that lowering the suction pressure and speed on their breast pump reduces the off-flavor in stored milk. The theory is that aggressive suction may damage more fat globule membranes during expression, giving lipase a head start on breaking down fats before the milk even goes into storage. It’s low-risk and easy to try: if your pump has adjustable settings, experiment with gentler suction to see if it makes a difference for your milk.

Saving a Frozen Stash That Already Tastes Off

Mixing thawed high-lipase milk with freshly expressed milk can dilute the flavor enough that some babies will accept it. Start with a ratio of mostly fresh milk and a small amount of thawed, then adjust based on what your baby tolerates.

Adding a drop of alcohol-free vanilla extract to thawed milk is a suggestion that circulates in parenting communities. La Leche League International notes that this approach has not been researched, so its safety and effectiveness aren’t established. If you try it, use a very small amount and watch your baby’s reaction.

Some babies are simply less sensitive to the taste change than others. Before discarding an entire stash, try offering it at different temperatures or in different contexts (mixed into cereal for older babies, for example). Babies who are very hungry may be less picky about flavor. But if your baby consistently refuses, scalding future milk and using the older stash for milk baths is a common, if bittersweet, solution.

Can Diet or Supplements Change Lipase Levels?

There’s no evidence that changing your diet will lower lipase activity in your milk. Lipase levels appear to be genetically determined and vary naturally from person to person. Some parents wonder about antioxidant-rich foods or supplements like sunflower lecithin. While maternal diet does influence certain milk components (carotenoid levels in breast milk, for instance, are directly tied to what you eat), no dietary intervention has been shown to reduce lipase activity or prevent the flavor changes it causes.

The distinction matters because chemical oxidation can also cause off flavors in stored milk, and oxidation is a separate process from lipase activity. If your milk tastes more like metal than soap, oxidation could be a factor, and antioxidant intake might theoretically play a role. But for the classic soapy or rancid smell that develops over hours to days, lipase is the cause, and scalding is the fix.
