Scalding breast milk means briefly heating it on the stove until it reaches about 180°F (82°C), then cooling it rapidly before storing. The whole process takes just a few minutes and prevents that soapy or metallic smell that can develop in stored milk, which some babies flat-out refuse to drink.
Why Stored Milk Smells Soapy
Breast milk contains natural enzymes called lipases that continue breaking down fats even after the milk has been expressed. As those fats break down, they release fatty acids that can give the milk a soapy, metallic, or even slightly rancid smell. Exposure to air during pumping and storage also oxidizes unsaturated fatty acids in the milk, which can further change the taste and odor.
This milk is still safe. It hasn’t spoiled. But many babies notice the flavor change and refuse to drink it, which is especially frustrating if you’ve built up a freezer stash only to discover the problem weeks later. Scalding deactivates the enzyme responsible, stopping the fat breakdown before it starts.
How to Test If You Need to Scald
Before adding scalding to your pumping routine, confirm that your milk actually changes in storage. Express a small amount and split it into two portions. Refrigerate one and freeze the other. After 24 hours, smell and taste the refrigerated sample. After a few days, thaw and check the frozen one. If either has developed a soapy, metallic, or off flavor compared to fresh milk, scalding will likely solve the problem. If your milk smells and tastes fine after storage, there’s no reason to add this extra step.
Step-by-Step Scalding on the Stove
The stovetop method is the most reliable way to scald because you can monitor the temperature precisely. Here’s how to do it:
- Pour freshly expressed milk into a small saucepan. Use stainless steel rather than nonstick. A smaller pan gives you better temperature control, especially for smaller volumes.
- Heat over medium heat, stirring gently. Watch for tiny bubbles forming around the edges of the pan. This happens at roughly 180°F (82°C). Do not bring it to a full, rolling boil.
- Remove from heat immediately. As soon as you see those edge bubbles or your thermometer reads 180°F, take the pan off the burner. Overheating destroys more nutrients than necessary.
- Cool the milk quickly. Pour the hot milk into a clean container and set it in an ice bath (a bowl filled with ice water). Rapid cooling preserves the milk’s nutritional quality and prevents bacterial growth during the transition to storage temperature.
- Store as usual. Once the milk is cool, transfer it to storage bags or bottles and refrigerate or freeze following standard guidelines.
A kitchen thermometer takes the guesswork out of this. Clip-on candy thermometers or instant-read probe thermometers both work well. If you don’t have one, the edge-bubble visual cue is your backup.
Lower Temperature Options
You don’t necessarily need to hit 180°F. The enzyme that breaks down fats can also be deactivated at lower temperatures held for slightly longer. Heating milk to 144.5°F (62.5°C) for one minute, or to 163°F (72°C) for 15 seconds, also works. These lower temperatures preserve slightly more of the milk’s beneficial components but require a thermometer since there’s no reliable visual indicator at those ranges. If you’re comfortable watching a thermometer and timing carefully, this is a gentler approach.
Using a Bottle Warmer or Electric Kettle
Some parents prefer not to pour breast milk directly into a pan. An electric kettle with a temperature display can work as a water bath: fill the kettle with water, place your container of milk inside it, and heat until the milk reaches the target temperature. You’ll want your own thermometer in the milk itself rather than relying on the kettle’s water temperature reading, since the milk will lag behind the surrounding water.
Standard bottle warmers are less reliable for scalding. Most are designed to gently warm milk to body temperature, not to reach 180°F. Some parents have made them work by running extra cycles or adding more water, but the results are inconsistent. If precision matters to you, the stovetop or kettle method is more dependable.
Timing Matters: Scald Before Storing
Scalding only works if you do it before the milk goes into the fridge or freezer. The enzymes start working on fats immediately after expression, so the sooner you scald, the better. If you pump at work and can’t scald right away, keep the milk cold until you get home, then scald it that same day before transferring to longer-term storage. Milk that has already developed the off flavor can’t be fixed by scalding after the fact, since the fatty acids have already been released.
This also means that any milk already in your freezer that smells soapy when thawed won’t benefit from reheating. Some babies will still drink it, especially if mixed with freshly expressed milk. It’s worth trying before discarding a whole stash.
What Scalding Does to the Milk
Heating breast milk does reduce some of its immune and nutritional properties. Certain antibodies and protective proteins are sensitive to heat, and scalding at 180°F will deactivate some of them along with the lipase. The lower-temperature methods (144.5°F for one minute, for example) preserve more of these components because less heat exposure is involved.
That said, scalded breast milk is still nutritionally superior to formula. It retains its calories, most vitamins, and the majority of its beneficial compounds. The tradeoff is straightforward: milk your baby will actually drink is more valuable than raw milk they refuse. If your baby accepts stored milk without scalding, there’s no benefit to doing it. If they won’t drink it otherwise, scalding is a practical solution that keeps the milk’s core nutrition intact.
Making It Part of Your Routine
Scalding adds about five to ten minutes to each pumping session’s worth of milk handling. Many parents find it easiest to batch the process: pump throughout the day, refrigerate the milk, then scald everything in one session at the end of the day. Keep your saucepan, thermometer, and ice bath setup in an accessible spot so it feels less like a chore. Once you’ve done it a few times, it becomes automatic. Label your bags clearly so you know which milk has been scalded, especially if you’re transitioning from an older stash that wasn’t treated.
