Arborio rice is a nutritious grain, but it’s not the healthiest rice you can choose. It’s naturally gluten-free, low in fat, and provides a modest amount of B vitamins and minerals. However, its starch composition makes it digest faster than many other rice varieties, and it carries higher arsenic levels than basmati or jasmine rice. Whether it fits well into your diet depends on how often you eat it and what you’re pairing it with.
Nutritional Profile of Arborio Rice
Arborio rice is a short-grain white rice, and nutritionally it behaves like one. It’s predominantly carbohydrate, with minimal fat and a moderate amount of protein. A typical cooked serving (about 3/4 cup) provides roughly 170 to 200 calories, almost entirely from starch.
Where arborio falls short compared to brown rice or other whole grains is fiber. Because it’s milled and polished, most of the bran layer is removed, taking much of the fiber and a good portion of the micronutrients with it. Uncooked arborio contains about 30 mg of magnesium per 100 grams, small amounts of thiamin (B1), niacin (B3), and vitamin B6, and just 0.2 mg of iron. These numbers drop further once the rice absorbs water during cooking. It’s not a standout source of any particular vitamin or mineral.
Some white rice sold in the United States is enriched with added iron, folic acid, and B vitamins to replace what’s lost during milling. Imported Italian arborio rice, which is what most brands sell, is typically not enriched. If you rely on rice as a staple, that distinction matters for your overall nutrient intake.
Why Arborio Spikes Blood Sugar More
The thing that makes arborio rice creamy and perfect for risotto is the same thing that makes it less ideal for blood sugar control. Arborio is exceptionally high in amylopectin, a type of starch that forms branching chains your body breaks down quickly. Most rice contains a mix of two starches: amylopectin and amylose. Varieties with more amylose digest more slowly, produce more resistant starch (which acts somewhat like fiber), and cause a gentler rise in blood sugar.
Arborio rice tips heavily toward amylopectin, which is why the grains release so much starch into the cooking liquid and create that characteristic creamy texture. The tradeoff is a higher glycemic index, meaning your blood sugar rises faster and higher after eating it compared to long-grain varieties like basmati, which contain more amylose. For most people eating risotto occasionally, this isn’t a concern. If you have diabetes or prediabetes, or you’re eating rice daily, choosing a higher-amylose variety like basmati or a parboiled long-grain rice will give you a noticeably better blood sugar response.
Arsenic Levels Are Worth Knowing About
All rice absorbs arsenic from soil and water, but the amount varies dramatically by variety and growing region. Arborio rice, particularly from Italy, tends to carry more arsenic than many commonly available alternatives. In a study published in Environmental Health Perspectives, Italian arborio rice contained an average of 211 micrograms of total arsenic per kilogram, with about 66% of that in inorganic form (the type most concerning for health). For comparison, Indian basmati white rice averaged just 32 micrograms per kilogram, and Thai jasmine rice came in at 110 micrograms per kilogram.
That means arborio can carry roughly six to seven times more total arsenic than basmati. Inorganic arsenic is a known carcinogen with long-term exposure, and regulatory agencies recommend limiting it, especially for children and people who eat rice frequently. Cooking rice in excess water (like pasta) and draining it can reduce arsenic content by 40 to 60%, though this method washes away much of the starch that gives risotto its texture. If you make risotto once or twice a month, the arsenic exposure is minimal. If rice is a daily part of your diet, rotating in lower-arsenic varieties like basmati is a practical way to reduce your cumulative intake.
How It Compares to Other Rice Types
- Brown rice: Significantly more fiber, magnesium, and B vitamins because it retains the bran layer. Lower glycemic index. Higher in arsenic than white basmati, though, since arsenic concentrates in the outer layers of the grain.
- Basmati (white): Similar calorie and protein content to arborio, but with more amylose starch, meaning slower digestion and a lower glycemic index. Much lower arsenic levels, especially Indian-grown basmati.
- Jasmine rice: Sits between arborio and basmati in both glycemic impact and arsenic content. Higher amylopectin than basmati but less than arborio.
- Parboiled (converted) rice: Processed in a way that pushes nutrients from the bran into the grain before milling. Higher in B vitamins and resistant starch than regular white rice, with a lower glycemic index than arborio.
Making Arborio Rice Part of a Healthy Diet
Arborio rice isn’t unhealthy in the way that, say, a processed snack food is. It’s a whole food, naturally gluten-free, and a decent source of energy. The issues are relative: compared to other rice options, it digests faster, contains fewer micronutrients (unless enriched), and carries more arsenic. Those differences matter most when rice is a frequent part of your meals.
If you enjoy risotto, the best approach is treating it as an occasional dish rather than a staple grain. Adding vegetables, protein, and healthy fats to your risotto slows digestion and balances the meal. Mushroom risotto with a side salad, for example, is a far different metabolic experience than a bowl of plain arborio rice. The fat and fiber from other ingredients slow gastric emptying, which blunts the blood sugar spike that arborio’s starch would otherwise cause.
For everyday rice eating, basmati or parboiled varieties give you a better overall nutritional profile with lower arsenic exposure and gentler effects on blood sugar. Save the arborio for when the recipe calls for it.
