Bean soup is one of the better meal choices you can make if you have diabetes. Beans have some of the lowest glycemic index values of any carbohydrate food, with kidney beans scoring around 24, chickpeas around 28, and lentils around 32 on a scale where pure glucose is 100. That means they raise blood sugar slowly and modestly compared to bread, rice, or potatoes. Turned into soup, beans retain these advantages while delivering a filling, high-fiber meal.
Why Beans Are Effective for Blood Sugar
Beans contain a type of starch called resistant starch that your body can’t break down in the upper digestive tract. Instead of being absorbed as glucose in your small intestine, this starch travels to your large intestine where gut bacteria ferment it. That fermentation produces short-chain fatty acids, which improve insulin sensitivity and reduce the amount of glucose your liver releases into your bloodstream. The combination of resistant starch and soluble fiber in beans essentially slows the entire process of digestion, creating a gradual trickle of glucose rather than a flood.
Beans also trigger the release of GLP-1, a hormone that helps regulate blood sugar after meals. In animal studies on diabetic mice, a protein extracted from broad beans significantly reduced blood glucose and insulin levels while boosting GLP-1 secretion. This is the same hormone that newer diabetes and weight-loss medications target, and beans stimulate it naturally through their protein and fiber content.
The Second Meal Effect
One of the most useful properties of beans for people with diabetes is something researchers call the “second meal effect.” Eating beans at one meal improves your blood sugar response not just at that meal, but at the next one too. In clinical studies, eating lentils at breakfast reduced the blood sugar spike at lunch by 38%. Eating beans or lentils at dinner improved glucose levels the following morning at breakfast.
This happens because the fermentation of resistant starch in your gut continues for hours after you eat. The short-chain fatty acids produced during that process keep working on your insulin sensitivity well into the next meal. So a bowl of bean soup at lunch can make your dinner metabolically easier on your body, even if dinner doesn’t contain any beans at all.
Carb Counts for Common Bean Soups
Beans do contain carbohydrates, so portion awareness still matters. But a large share of those carbs come from fiber, which doesn’t raise blood sugar. For an 8-ounce serving of common bean soups, the net carbohydrate counts (total carbs minus fiber) are fairly moderate:

Those numbers are for a single cup, which is a small bowl. Most people eat closer to 1.5 or 2 cups at a sitting, so double-check your portion if you’re counting carbs carefully. Even at two cups, though, the net carb load stays well below what you’d get from a sandwich or a plate of pasta.
Homemade vs. Store-Bought Soup
Making bean soup at home gives you the most control over what goes into it. Store-bought and canned bean soups often contain ingredients that can undermine the benefits. Sodium is the most common issue: canned beans average about 295 mg of sodium per serving, and commercial soups pile on even more through broth and seasoning. If you use canned beans as a base, draining and rinsing them cuts sodium by 45 to 50%.
Beyond sodium, check labels for added sweeteners like high fructose corn syrup, dextrose, or honey, which some commercial soups include for flavor. Thickeners like modified food starch or cornstarch can also raise the glycemic impact of a soup that would otherwise be gentle on blood sugar. A simple homemade bean soup built from dried beans, vegetables, broth, and spices avoids all of these. If you’re buying premade, look for versions with short ingredient lists and no added sugars.
How to Build a Better Bean Soup
Start with dried beans when possible. They’re cheaper than canned, contain no added sodium, and you control the texture. Black beans, kidney beans, navy beans, and lentils all work well. Lentils have the advantage of not needing overnight soaking, so they cook in about 30 minutes.
Add non-starchy vegetables like tomatoes, spinach, celery, onions, and peppers to increase the volume and nutrient density without significantly raising carbs. Use olive oil rather than butter, and season with garlic, cumin, smoked paprika, or chili flakes. Avoid adding large amounts of starchy ingredients like potatoes, white rice, or pasta, which raise the glycemic load considerably. A small amount of barley is a good grain addition if you want more body, since it has a low glycemic index and contributes its own second meal effect.
If you like a creamy texture, blend a portion of the soup rather than adding cream or flour-based thickeners. This keeps the fiber intact and avoids unnecessary fat or refined carbs.
One Caution: Kidney Disease
Many people with diabetes eventually develop some degree of kidney disease, and this changes the picture. Beans are high in phosphorus and potassium, two minerals that healthy kidneys filter easily but damaged kidneys cannot. When kidney function declines, excess phosphorus weakens bones and can damage blood vessels, the eyes, and the heart.
