Bear meat is a solid source of protein and relatively lean compared to many cuts of beef, but it comes with real safety concerns that other game meats don’t. A 3.5-ounce serving of cooked black bear provides about 20 grams of protein and 163 calories, with only 8.3 grams of fat. Nutritionally, it holds its own. The bigger question is whether the risks are worth it.
How Bear Meat Compares Nutritionally
Black bear meat sits in a favorable spot among red meats. At 163 calories and 8.3 grams of fat per 100-gram serving, it’s leaner than most grocery store ground beef, which typically runs 15 to 20 grams of fat for the same portion. The protein content of 20.1 grams per serving is comparable to venison and elk.
Like other wild game, bear meat likely has a healthier fat profile than grain-fed beef. Research from Purdue University found that wild North American game animals carry a ratio of omega-6 to omega-3 fatty acids around 2-to-1, which is far better than the 5-to-1 or even 13-to-1 ratios found in grain-fed cattle. While this specific analysis focused on elk, deer, and antelope, bears that eat a natural, varied diet would follow a similar pattern. Bears that feed heavily on salmon in the fall tend to accumulate more omega-3-rich fat, though that diet also changes the flavor significantly.
The Trichinella Problem
This is the single biggest health concern with bear meat, and it’s not a small one. Bears are one of the primary sources of trichinellosis (the parasitic infection caused by Trichinella worms) in the United States. Between 1% and 24% of black bears in Canada and Alaska carry the parasite, and infection rates vary widely by region. The CDC has documented multiple outbreaks tied directly to undercooked bear meat, including cases in Arizona, Minnesota, South Dakota, and North Carolina in recent years.
What makes bear meat particularly tricky is the species of Trichinella involved. The strain commonly found in bears, Trichinella nativa, is freeze-resistant. That means the old advice about freezing pork or wild game to kill parasites does not work here. You cannot freeze bear meat and expect it to be safe. The only reliable way to kill the larvae is heat: the CDC recommends cooking bear meat to an internal temperature of at least 165°F (74°C). Use a meat thermometer, and check the thickest part of the cut. No pink, no rare, no medium-rare.
Trichinellosis symptoms include muscle pain, fever, swelling around the eyes, and fatigue. Diagnosis usually requires a blood test and sometimes a muscle biopsy. The infection is treatable but unpleasant, and severe cases can require hospitalization.
Contaminants in Bear Fat and Organs
Bears are apex predators and omnivores, which means they accumulate environmental toxins more than animals lower on the food chain. This is especially relevant for organ meats. Research on polar bear livers found mercury concentrations ranging from 20 to 70 milligrams per kilogram of dry tissue, with levels increasing as the animals age. Older bears accumulate substantially more mercury than younger ones.
Bear fat is also a concern. Studies on polar bears in the Canadian Arctic detected over 200 different persistent organic pollutants in fat and liver samples, including PCBs and other industrial chemicals that concentrate in fatty tissue. These compounds biomagnify through the food chain, meaning an animal that eats other animals (or large quantities of fish) ends up with far higher concentrations than its prey.
The contamination data comes primarily from polar bears, which sit at the top of an Arctic marine food web and accumulate more pollutants than inland black bears. Still, the principle applies: bear fat and organ meats carry more environmental contaminants than the muscle meat. If you’re eating bear, stick to the lean cuts and avoid the liver entirely.
Season and Diet Change Everything
Bear meat from a spring hunt and bear meat from a fall hunt are practically different foods. After hibernation, spring bears are lean, with minimal fat cover and very little intermuscular fat. The meat is relatively mild in flavor. Fall bears, by contrast, have spent months eating heavily to prepare for winter. They carry substantially more fat, and their diet directly shapes the taste.
In Alaska and other coastal regions where bears gorge on salmon through the fall, the meat becomes oilier and takes on a distinctly fishy flavor that many people find off-putting. Bears that feed primarily on berries, nuts, and vegetation tend to produce milder, more palatable meat. This is one reason experienced hunters often prefer spring bear or target bears in regions with berry-heavy diets.
How to Handle and Cook Bear Meat Safely
Treating bear meat like beef or venison is a mistake. The Trichinella risk demands a different approach. Cook every cut to at least 165°F internally, measured with a thermometer. This applies to roasts, steaks, ground meat, and especially sausages or jerky. Smoking or curing bear meat at low temperatures may not reach the threshold needed to kill parasites.
When processing a bear, trim away as much fat as possible. Bear fat goes rancid quickly compared to beef or pork fat, and it’s where environmental contaminants concentrate. If you’re grinding the meat, consider mixing it with pork fat from a known source rather than using the bear’s own fat. Keep the meat cold during processing, just as you would with any wild game, and freeze it promptly if you’re not cooking it right away. Freezing won’t eliminate Trichinella nativa, but it does slow bacterial growth and preserve quality.
Bear meat works well in slow-cooked preparations like stews, braises, and chili, where the extended cooking time and high liquid temperature ensure the entire cut reaches a safe temperature throughout. These methods also help tenderize what can be a tougher, more muscular meat, especially from older animals.
