Bone broth protein powder is a decent source of collagen-related amino acids that may support joint comfort and gut health, but it’s a lower-quality protein than whey, soy, or pea when it comes to building muscle. Whether it’s “good for you” depends on what you’re using it for. If you want joint and gut support, the evidence is reasonably encouraging. If you want to maximize muscle growth, you’re better off with other options.
Protein Quality Is Below Average
Not all protein is equal, and bone broth protein powder falls short by the standard measure. Protein quality is scored on a scale called PDCAAS, where 1.0 is the highest possible rating. Whey protein scores a perfect 1.0. Soy and pea protein land between 0.8 and 0.9. Poultry bone broth protein scores around 0.7 at best, and many commercial bone broth powders score as low as 0.19.
The reason is the amino acid profile. Bone broth is rich in glycine, proline, and hydroxyproline, the building blocks of collagen. Chicken bone broth, for instance, contains roughly 4 mg of glycine and 2.4 mg of proline per gram. These amino acids are useful for connective tissue, but they’re not the ones that drive muscle protein synthesis. Leucine, the amino acid most responsible for triggering muscle growth, is present in bone broth at only about 0.7 to 1.4 mg per gram, far less than you’d get from whey or even a chicken breast.
If your primary goal is gaining or preserving muscle, bone broth protein powder is not the best tool for the job. It works as a supplemental protein source alongside a diet that already includes complete proteins, but it shouldn’t be your main one.
Where It Actually Shines: Joint Support
The real selling point of bone broth protein powder is its collagen content, and the evidence for collagen’s effect on joints is genuinely promising. A 2024 systematic review in Orthopedic Reviews examined 14 human trials using collagen supplements at doses ranging from 1.2 to 20 grams per day. The majority of studies found meaningful improvements: less joint pain, better mobility, and improved scores on standard knee function questionnaires.
The benefits showed up most clearly in how people felt. Participants consistently reported less pain and better quality of life. In one trial, 5 grams of collagen per day significantly reduced self-reported pain intensity. In another, 10 grams per day improved both pain scores and overall knee function. A dose-comparison study found that while 2.5 and 5 grams helped, 10 grams per day of collagen produced the best outcomes across pain, mobility, and quality of life measures.
There’s an important caveat, though. When researchers used objective imaging tools like MRI to look at actual cartilage changes, the results were much less impressive. Only about 25% of those objective measurements showed significant improvement. So collagen appears to reduce the experience of joint pain more reliably than it repairs cartilage tissue, at least over the timeframes studied (typically 12 to 24 weeks).
A typical serving of bone broth protein powder delivers 15 to 20 grams of protein, most of it collagen-derived, which puts you comfortably in the dosage range used in these trials.
Gut Health Benefits Look Plausible
Bone broth protein powder contains several amino acids that play roles in maintaining the gut lining: glutamine, glycine, proline, histidine, and arginine. These compounds support cellular repair and help maintain the integrity of the intestinal barrier, the layer of cells that controls what passes from your digestive tract into your bloodstream.
A 2025 review published in Digestive Diseases Sciences concluded that bone broth’s amino acid and mineral content has “demonstrable effects on the intestinal barrier” and may help reduce intestinal permeability, commonly called leaky gut. The researchers noted particular relevance for people with inflammatory bowel conditions, where these nutrients appeared to reduce inflammation and support remission. This is still an emerging area of evidence, with most of the mechanistic work done in cell and animal models rather than large human trials. But the biological rationale is solid, and the amino acid profile of bone broth is well-suited to this purpose.
Heavy Metals Are a Real Concern
Bones accumulate heavy metals over an animal’s lifetime, and that contamination can carry over into bone-derived products. A 2025 Consumer Reports investigation tested 23 protein products and found that the source of protein matters significantly. Plant-derived proteins contained nine times the lead found in dairy-based (whey) proteins, and beef-based proteins fell in between, with twice the lead of whey. Of the 23 products tested, 16 exceeded the 0.5 microgram level that Consumer Reports considers safe per serving, and four exceeded the FDA’s daily lead limit for children.
This doesn’t mean bone broth protein powder is dangerous, but it does mean brand selection matters. Look for products that provide third-party testing results or certificates of analysis showing heavy metal levels. Companies that test for lead, cadmium, and arsenic and publish the results are worth the premium.
How the Powder Is Made
The manufacturing process is relatively straightforward. Bones (usually beef or chicken) are cooked at around 100 to 110°C for about five hours in water, extracting collagen, minerals, and amino acids into the liquid. The fat is skimmed off, and the remaining broth is concentrated and dried into powder.
Drying methods vary. Some manufacturers use gentle low-temperature techniques (around 50 to 70°C) that better preserve heat-sensitive nutrients. Others use higher temperatures or spray-drying. The powder form is more concentrated than liquid broth because the water has been removed, packing more protein and collagen per serving. Liquid broth delivers the same nutrients in a more dilute, potentially easier-to-absorb form, but you’d need to drink several cups to match the protein in one scoop of powder.
Watch for Additives if You Have a Sensitive Gut
Bone broth protein itself doesn’t contain common allergens like dairy or soy, which makes it appealing for people with food sensitivities. But the additives mixed into flavored versions can cause trouble, especially for people with IBS or those following a low-FODMAP diet.
Sugar alcohols like xylitol, sorbitol, and mannitol are used as low-calorie sweeteners in many protein powders, and manufacturers often use doses well above what sensitive individuals can tolerate. Prebiotics like inulin or chicory root fiber are another common addition that can trigger bloating and gas. Check the ingredient list before buying, and opt for unflavored versions if your gut is reactive.
Who Benefits Most
Bone broth protein powder makes the most sense for people who want collagen-specific benefits: less joint stiffness, support for gut lining integrity, or a protein source that avoids dairy, soy, and common allergens. It’s a reasonable daily supplement at one to two scoops, especially if you’re over 40 and noticing joint discomfort, or if you’re recovering from a gut-related condition.
It’s not the right choice as your sole protein supplement if you’re focused on muscle building or athletic performance. The amino acid profile simply isn’t optimized for that purpose. Pairing it with a complete protein source, whether from food or a whey or pea protein supplement, gives you the best of both worlds: the collagen benefits of bone broth plus the muscle-building amino acids it lacks.
