Is Chicken Soup Good for a Cold? What Science Says

Chicken soup genuinely helps when you have a cold. It won’t cure the virus, but lab research and clinical measurements show it eases congestion, reduces inflammation, and delivers fluids and nutrients at a time when your body needs all three. The centuries-old remedy has more science behind it than most people expect.

How Chicken Soup Fights Cold Symptoms

When you catch a cold, your symptoms aren’t caused directly by the virus itself. They’re caused by your immune system’s inflammatory response. White blood cells called neutrophils rush to the infected area in your upper respiratory tract, and that swarm of activity is what produces the congestion, swelling, and mucus you feel.

A study published in the journal CHEST tested a traditional chicken soup recipe and found it significantly inhibited neutrophil migration in a concentration-dependent manner, meaning the more soup in the sample, the stronger the effect. This mild anti-inflammatory action could explain why cold symptoms feel less severe after a bowl of soup. The researchers noted that the anti-inflammatory compounds were present in the liquid portion of the soup, not just the solid ingredients. Interestingly, they also found that chicken broth alone was not nearly as effective. It was the combination of chicken and vegetables together that produced the strongest results, though the team couldn’t pinpoint a single ingredient responsible.

The Congestion Relief Is Measurable

Hot liquids in general help with nasal congestion, but chicken soup appears to work better than plain hot water. A separate study, also published in CHEST, measured nasal mucus velocity in 15 healthy subjects before and after drinking different liquids. Hot chicken soup sipped from a cup increased the speed at which mucus moved through the nose from 6.9 to 9.2 millimeters per minute. Hot water managed a smaller increase, from 6.2 to 8.4 mm per minute. Cold water actually slowed things down, dropping mucus velocity from 7.3 to 4.5 mm per minute.

Faster mucus movement means your nose clears itself more efficiently, which is exactly what you want when you’re stuffed up. The effect lasted about 30 minutes before returning to baseline, so sipping soup throughout the day rather than having one big bowl makes practical sense. Drinking it from a cup (sipping) was also more effective than drinking through a straw, likely because sipping lets the steam reach your nasal passages.

What the Ingredients Contribute

Chicken is rich in an amino acid called cysteine, which helps loosen thick secretions in the lungs and airways. This is the same compound that pharmaceutical mucus-thinning drugs are based on, though the concentration in soup is lower. Still, combined with hot liquid and salt, it contributes to the thinning effect you notice when breathing feels easier after eating.

The vegetables matter too. The original CHEST study tested each vegetable in the recipe individually (onions, sweet potatoes, parsnips, turnips, carrots, celery, parsley) and found that every one of them had some ability to inhibit neutrophil movement on its own. The researchers concluded it was likely the synergy of multiple ingredients working together that gave the full soup its strongest anti-inflammatory properties.

Beyond specific compounds, chicken soup is also just good nutrition for a sick body. It delivers protein from the chicken, electrolytes from the broth, and a range of vitamins from the vegetables, all in a form that’s easy to eat when your appetite is low and your throat is sore. The fluid itself helps prevent dehydration, which is a real concern when you’re running a fever or not drinking enough.

Homemade vs. Store-Bought Soup

Homemade soup gives you control over what goes in, and the research that demonstrated anti-inflammatory effects used a traditional homemade recipe with real chicken and fresh vegetables. That said, store-bought and canned soups still provide warmth, hydration, and some nutrition when you’re too sick to cook.

The main trade-off with canned soup is sodium. A single cup of canned soup can contain 800 or more milligrams of sodium, and since most cans hold at least two cups, eating a full bowl could deliver close to a full day’s worth of salt. If you’re choosing canned, look for options in the 360 to 600 milligram range per serving. Canning also removes some water-soluble vitamins and often strips the fiber-rich skins from vegetables. Some canned soups also contain BPA from aluminum can linings, so choosing cans labeled “BPA-free” or packaged in steel is a safer option.

If someone offers to make you soup from scratch while you’re sick, say yes. But if a can from the pantry is what you’ve got, it still beats skipping a meal or drinking cold water.

Why It Works Better Than Other Hot Drinks

Tea, broth, and hot water all provide some congestion relief through steam and warmth. But chicken soup combines several mechanisms at once: the anti-inflammatory effect from the ingredient combination, the mucus-thinning properties of cysteine from the chicken, the nasal clearance boost from the hot liquid, and the nutritional support of a balanced meal. No single hot beverage does all of those things simultaneously.

The comfort factor is real too. When you’re sick, appetite drops and everything tastes muted. Soup is one of the few foods that remains appealing, goes down easily, and doesn’t require much effort to eat. That matters more than it sounds. Staying nourished and hydrated is one of the most effective things you can do to support your recovery, and chicken soup makes that easier than almost any alternative.
