Is Cholesterol Only Found in Animal Products?

Cholesterol is overwhelmingly found in animal products, but it’s not exclusive to them. Small amounts occur naturally in certain plants, and some types of algae produce meaningful quantities. The practical reality, though, is that virtually all the cholesterol in your diet comes from animal-based foods like eggs, organ meats, shellfish, and dairy.

Why Cholesterol Is Linked to Animal Foods

Every animal cell uses cholesterol as a structural component of its cell membranes. It’s essential for producing hormones, vitamin D, and bile acids. Because cholesterol is woven into the biology of all animals, every piece of meat, fish, egg, or dairy product contains it. The amounts vary widely depending on the food. A single large egg contains about 186 mg of cholesterol, almost all of it in the yolk. Organ meats are far higher: a 3-ounce serving of cooked pork brain contains over 2,100 mg. Chicken gizzards clock in around 536 mg per cup.

Plants, by contrast, rely on a different family of compounds called phytosterols to do the same structural work in their cell membranes. Phytosterols are chemically similar to cholesterol but not identical. This is why plants are generally described as cholesterol-free, and why a vegan diet contains almost none.

Plants That Actually Contain Cholesterol

The “almost” matters. Cholesterol typically makes up less than 1% of the sterols in a plant, but certain plant families are exceptions. Members of the nightshade family (Solanaceae), which includes potatoes and tomatoes, produce cholesterol as part of their normal biochemistry. Potatoes, for instance, need cholesterol as a building block to make solanine, a naturally occurring toxic compound that helps the plant defend against pests. Some cells of the research plant Arabidopsis thaliana contain up to 19% of their sterols as cholesterol, and wheat roots can reach 10%.

These amounts are still tiny in the context of what you’d actually eat. A serving of potatoes contributes a negligible amount of cholesterol compared to a single egg. For anyone tracking dietary cholesterol, plant sources are functionally irrelevant.

Algae and Fungi Use Different Sterols

Red algae are a notable outlier in the non-animal world. Unlike most plants, red algae can contain cholesterol as their primary sterol. Brown algae rely on a different compound called fucosterol, and green algae primarily use a sterol called beta-sitosterol, but red algae genuinely produce cholesterol in a way that other plant-like organisms don’t.

Fungi, including mushrooms and yeast, use yet another compound: ergosterol. It plays the same membrane-stabilizing role that cholesterol plays in animal cells, but it behaves differently at the molecular level. Ergosterol is structurally similar enough to cholesterol that scientists study their differences to develop antifungal medications, but it is not cholesterol. Eating mushrooms does not add cholesterol to your diet.

How Plant Sterols Affect Your Cholesterol Levels

Here’s where the distinction between plant sterols and animal cholesterol becomes practically useful. Phytosterols look enough like cholesterol that your digestive system can’t easily tell them apart. When you eat foods rich in plant sterols, they compete with cholesterol for absorption in your gut. Your body ends up absorbing some of the plant sterols instead, and the displaced cholesterol gets excreted as waste. This is why foods fortified with plant sterols (certain margarines, orange juices, and supplements) are marketed for cholesterol management.

The effect is meaningful. Consuming plant sterols regularly can reduce cholesterol absorption enough to lower LDL levels, which is why they’re recommended by cardiologists as one dietary strategy for managing blood cholesterol.

What This Means for Your Diet

If you eat a fully plant-based diet, your cholesterol intake is essentially zero for all practical purposes. The trace amounts in potatoes or tomatoes are biologically insignificant. Your liver produces all the cholesterol your body needs regardless of what you eat, so a lack of dietary cholesterol doesn’t create a deficiency.

If you do eat animal products, the American Heart Association’s 2026 dietary guidance no longer treats dietary cholesterol as a primary target for heart disease prevention. Their position is that moderate egg consumption fits within a heart-healthy eating pattern. The bigger concern, in their view, is the overall dietary pattern: foods high in cholesterol (organ meats, egg-heavy fast food, processed meats) often come packaged with saturated fat, which has a stronger effect on blood cholesterol levels than dietary cholesterol itself.

So the short answer is that cholesterol is found almost exclusively in animal products, with biologically interesting but nutritionally irrelevant exceptions in certain plants and algae. For anyone making food choices based on cholesterol content, the dividing line between animal and plant foods holds up in practice, even if the biology is slightly more nuanced than a simple yes or no.
