Coconut sugar is only marginally better than brown sugar from a nutritional standpoint. Both deliver roughly the same calories per gram, are digested in the body the same way, and will affect your blood sugar similarly. The differences that do exist, mainly in mineral content and how each sugar is processed, are real but too small to matter at the amounts most people actually use.
Calories and Sugar Content Are Nearly Identical
Both coconut sugar and brown sugar provide about 4 calories per gram, which works out to roughly 15 calories per teaspoon. The World Sugar Research Organisation notes that coconut sugar, honey, maple syrup, and cane-based sugars all provide a similar amount of energy per gram and are digested the same way. Your body breaks down both into glucose and fructose regardless of the source.
Coconut sugar is primarily sucrose, just like brown sugar. Brown sugar is simply refined white sugar with molasses added back in, giving it that distinctive caramel flavor and moist texture. Coconut sugar comes from evaporated sap of the coconut palm flower, which gives it a slightly different flavor profile (more butterscotch, less caramel) but doesn’t change the fundamental chemistry. Sugar is sugar once it hits your bloodstream.
The Glycemic Index Claim Is Overstated
One of the most common reasons people reach for coconut sugar is the claim that it has a lower glycemic index (GI) of 35, compared to 64 for brown sugar. That number of 35 comes from a single study conducted by the Philippine Food and Nutrition Research Institute and has been widely repeated on coconut sugar packaging ever since. Independent research has questioned whether the difference is that dramatic. A study published by researchers testing the glycemic response of coconut sugar against sucrose and brown sugar noted that brown sugar and sucrose both clock in at a GI of 64, and the researchers expected coconut sugar to behave differently based on label claims, but the gap may not be as wide as marketed.
Even if coconut sugar does produce a somewhat gentler blood sugar response, the practical difference is minimal at typical serving sizes. A teaspoon or two in your coffee isn’t going to create a meaningfully different glucose spike regardless of which sugar you choose. If you’re managing blood sugar, the total amount of sugar matters far more than the type.
Coconut Sugar Has More Minerals, but Not Enough to Matter
This is where coconut sugar does have a genuine edge. Per 100 grams, coconut sugar contains roughly 100 to 1,000 milligrams of potassium (depending on the source and processing method), about 8 to 16 milligrams of magnesium, around 2 milligrams of iron, and small amounts of zinc. Brown sugar contains trace minerals from its molasses content, but generally in smaller quantities.
Here’s the catch: you’d never eat 100 grams of either sugar in a sitting. That’s about 25 teaspoons. At realistic serving sizes of a teaspoon or two, you’re getting fractions of a milligram of these minerals. A single banana gives you more potassium than an entire day’s worth of coconut sugar, and a handful of spinach delivers more iron. The mineral advantage is technically real but nutritionally irrelevant in practice.
How They’re Processed
Coconut sugar goes through less processing than brown sugar. Producers collect sap from the flower buds of coconut palms, then heat it until most of the water evaporates, leaving behind granules. No chemicals are added, and the process is relatively simple.
Brown sugar takes a longer route. Sugarcane is crushed, the juice is extracted, and it goes through multiple rounds of boiling, crystallization, and centrifuging to produce refined white sugar. Then molasses (a byproduct of that same refining process) is mixed back in. Light brown sugar contains about 3.5% molasses; dark brown sugar has about 6.5%. The result is more processed, though “less processed” doesn’t automatically mean healthier when the end product is still sugar.
Baking and Cooking Differences
If you’re thinking about swapping one for the other in recipes, they substitute at a 1:1 ratio by volume. But they don’t behave identically. Coconut sugar is drier and coarser than brown sugar, which gets its moisture from molasses. That lack of moisture can affect baked goods, making cookies less chewy and cakes slightly denser.
For recipes with a liquid batter (think pancakes, quick breads, or cakes that include milk, melted butter, or yogurt), dissolve the coconut sugar in the liquid ingredients first. This prevents a gritty texture in the final product. In recipes where brown sugar’s moisture plays a structural role, like soft chocolate chip cookies, you may notice a difference in texture if you swap in coconut sugar without adjusting for the dryness.
Flavor is the other variable. Coconut sugar tastes like deep caramel with a slight butterscotch note. It doesn’t taste like coconut. Brown sugar has that familiar molasses-forward warmth. In strongly flavored dishes, the difference is barely noticeable. In something delicate like a sugar cookie or whipped cream, you’ll taste the swap.
Which One Should You Actually Buy
If you prefer the taste of coconut sugar or like that it’s less processed, those are perfectly reasonable reasons to choose it. It typically costs two to four times more than brown sugar, so you’re paying a premium. Just don’t buy it expecting a meaningful health benefit. The calorie content is the same, the blood sugar impact is similar at normal serving sizes, and the mineral differences vanish at the amounts you’d realistically consume.
The most impactful choice isn’t which sugar you use. It’s how much. Whether you’re spooning coconut sugar or brown sugar into your oatmeal, the health effects are driven by quantity, not the label on the bag.
