Is Corn Oil Better Than Canola Oil for Health?

Neither corn oil nor canola oil is universally better. The right choice depends on what you’re optimizing for. Canola oil has a healthier fat profile overall, with less saturated fat and a far better balance of omega fatty acids. Corn oil has some nutritional advantages of its own, including higher levels of plant sterols that help block cholesterol absorption. Here’s how they compare on the details that actually matter.

Fat Composition at a Glance

The biggest difference between these two oils is the type of fat they contain. Canola oil is predominantly monounsaturated fat (64%), the same heart-friendly fat that makes olive oil a staple of Mediterranean diets. It has relatively low saturated fat at about 7.5% and moderate polyunsaturated fat at 28.5%.

Corn oil flips that ratio. It’s mostly polyunsaturated fat (57%) with only about 29% monounsaturated fat, and its saturated fat content is nearly double canola’s at 13.6%. Polyunsaturated fats aren’t bad, but the specific type in corn oil matters, which brings us to omega fatty acids.

The Omega-6 Problem With Corn Oil

Both oils contain omega-6 and omega-3 fatty acids, but the ratios are dramatically different. Canola oil has an omega-6 to omega-3 ratio of about 5.6 to 1. Corn oil’s ratio is 52 to 1. That’s roughly ten times more skewed toward omega-6.

This matters because omega-6 and omega-3 fatty acids compete for the same metabolic pathways in your body. Most people already get far too much omega-6 from processed foods, fried foods, and other vegetable oils. A high omega-6 intake relative to omega-3 promotes inflammation, which over time contributes to cardiovascular disease and other chronic conditions. If you’re trying to improve that balance, canola oil is the clearly better choice. Corn oil pushes it further in the wrong direction.

Effects on Cholesterol

When it comes to lowering LDL (the “bad” cholesterol), the two oils perform similarly. In a clinical trial comparing canola, corn, and olive oils as part of a heart-healthy diet, LDL cholesterol dropped 16% with canola oil and 17% with corn oil. That difference is statistically insignificant. Both outperformed olive oil, which reduced LDL by 13%.

Total cholesterol also dropped with both oils: 12% for canola and 13% for corn. However, both oils also lowered HDL (the “good” cholesterol), with corn oil causing a slightly larger drop of 9% compared to canola’s 7%. So while corn oil is marginally better at lowering total and LDL cholesterol, it also takes a bigger bite out of your protective HDL.

Corn Oil’s Phytosterol Advantage

One area where corn oil genuinely shines is phytosterol content. Phytosterols are plant compounds that block cholesterol absorption in your gut, and corn oil contains 686 to 952 milligrams per 100 grams. Canola oil has 250 to 767 mg per 100 grams. At the high end, corn oil delivers roughly 25% more of these cholesterol-blocking compounds. This likely explains why corn oil performs slightly better on total cholesterol reduction despite its less favorable fat profile.

Cooking Performance

Both oils handle high heat well, making them suitable for frying, roasting, and sautéing. Refined corn oil has a smoke point around 450°F (230°C), while refined canola oil reaches slightly higher, around 468°F (242°C). For most home cooking, that difference is irrelevant. Even deep frying typically stays in the 350 to 375°F range.

Oxidative stability, which measures how quickly an oil breaks down and produces harmful compounds when exposed to heat and air, is nearly identical for both. In accelerated aging tests at 120°C, corn oil and canola (rapeseed) oil showed induction times within the same narrow range: about 4.8 to 5.0 hours when fresh, dropping to 3.2 to 3.8 hours after twelve months of storage. Neither oil has a meaningful edge in shelf life or frying durability.

Flavor Differences in the Kitchen

Both are considered neutral-flavored oils, but they’re not identical. Corn oil has a subtle sweetness that pairs well with fried foods and popcorn. It’s a popular choice in restaurants and commercial kitchens partly for this reason, and partly because it tends to cost less in bulk.

Canola oil is more truly neutral, almost flavorless. That makes it the better option for baking, salad dressings, and marinades where you don’t want the oil to contribute any taste at all. If you’re making a vinaigrette or a cake and want the other ingredients to shine, canola disappears into the background more completely than corn oil does.

Processing and Safety

Both oils are typically extracted using hexane, an industrial solvent, then refined, bleached, and deodorized before reaching store shelves. This is standard for most vegetable oils. Trace amounts of solvent can remain in the finished product, though at levels generally considered safe.

Canola oil sometimes raises questions because it’s derived from rapeseed, which naturally contains erucic acid, a fatty acid linked to heart damage in animal studies. Modern canola varieties have been bred to minimize this compound, and FDA regulations cap erucic acid at no more than 2% of the total fatty acids in food-grade canola oil. At that level, it’s not a practical health concern.

Which Oil Should You Use?

For everyday cooking where health is your priority, canola oil is the stronger choice. Its fat profile is closer to what nutrition guidelines recommend: high in monounsaturated fat, low in saturated fat, and with an omega-6 to omega-3 ratio that won’t worsen the imbalance most people already have. It also contains about 2.4 mg of vitamin E per tablespoon.

Corn oil isn’t a bad oil. Its phytosterol content is genuinely impressive, and it performs just as well as canola for lowering LDL cholesterol. But the extremely high omega-6 to omega-3 ratio (52 to 1 versus canola’s 5.6 to 1) is a significant drawback if you’re eating it regularly. Using corn oil occasionally for frying or when you want that slight sweetness is perfectly reasonable. Making it your default cooking oil is harder to justify when canola does the same job with a better nutritional profile.
