Several mechanisms explain this. Kimchi is packed with lactic acid bacteria, including species of Leuconostoc, Lactobacillus, and Weissella. These probiotics produce short-chain fatty acids in your gut, compounds that help your cells respond better to insulin. A high-fat diet tends to reduce these beneficial bacteria and their byproducts. Fresh kimchi still has the fiber, vitamins, and spice compounds, but it lacks the dense population of beneficial bacteria that develop during fermentation. Look for kimchi that’s been aged and, if buying from a store, check that it’s sold refrigerated and labeled as containing live cultures.
Watching the Sodium
Sodium is the main concern with kimchi, especially for people with diabetes who often also manage high blood pressure. Traditional kimchi recipes use a lot of salt for the fermentation process. Commercial kimchi varies significantly depending on where and how it’s made. The sugar content in kimchi comes partly from natural ingredients like garlic, red pepper powder, and glutinous rice paste, and partly from added sweeteners in some brands. During fermentation, microorganisms convert much of this sugar into metabolites like mannitol and sorbitol (sugar alcohols), which have a smaller impact on blood sugar. Starting with a small serving daily and increasing gradually gives your gut time to adjust to the influx of probiotics, which can cause gas or bloating initially.
For someone managing diabetes, kimchi works well as a condiment alongside protein and non-starchy vegetables, meals that already have a low glycemic impact.
