Maltodextrin is not keto friendly. With a glycemic impact comparable to pure glucose, it is one of the worst possible ingredients for anyone trying to stay in ketosis. Even small amounts can spike blood sugar and insulin quickly enough to shut down the fat-burning state that makes a ketogenic diet work.
Why Maltodextrin Hits Harder Than Sugar
Maltodextrin is a white powder derived from starch, typically corn, rice, or potato. Because it’s technically a “complex carbohydrate” made of linked glucose molecules, many people assume it digests slowly. That assumption is wrong. Research published through the National Institutes of Health calls this a “misconception not supported by any research data.” Enzymes in your small intestine break maltodextrin apart so rapidly that glucose enters your bloodstream at the same rate as if you’d swallowed pure glucose.
The glycemic index of maltodextrin ranges from 85 to 105, depending on how it’s processed. Table sugar (sucrose) sits around 65. So maltodextrin spikes your blood sugar significantly faster and higher than the sugar you’d stir into coffee. Insulin responses after eating maltodextrin are also comparable to those after consuming pure glucose, both at rest and during exercise.
How It Knocks You Out of Ketosis
Ketosis depends on keeping insulin low. When insulin stays suppressed, your body breaks down stored fat into fatty acids and converts them into ketones for energy. Maltodextrin disrupts this process at every step.
The rapid glucose spike triggers a strong insulin response, which suppresses lipolysis, the process of releasing fat from your fat cells. Without a steady supply of fatty acids reaching the liver, ketone production drops. Research in the Journal of Metabolic Health specifically identifies high-glycemic carbohydrates like maltodextrin as compounds that “increase the insulin response and suppress endogenous lipolysis.” On a standard keto diet limiting carbs to 20 to 50 grams per day, even a tablespoon of maltodextrin (roughly 12 to 13 grams of carbs) eats up a significant portion of your daily allowance while delivering the sharpest possible blood sugar spike.
The practical result: a single serving of a protein bar, sports drink, or seasoning blend containing maltodextrin can stall ketone production for hours.
Where Maltodextrin Hides in Food
Maltodextrin is one of the most common food additives, used as a thickener, filler, or shelf-life extender. It shows up in products you might not expect:
- Protein powders and bars, especially those marketed as “low sugar” (maltodextrin isn’t classified as a sugar on labels)
- Salad dressings and sauces, where it adds body without obvious sweetness
- Spice blends and seasoning packets, used as a carrier for flavorings
- Sugar-free or diet products, where it bulks up artificial sweeteners
- Canned soups and instant foods, for texture and consistency
On an ingredients list, it may appear as “maltodextrin,” “corn syrup solids,” or simply be grouped under “modified food starch.” If you’re tracking net carbs to stay in ketosis, checking labels for maltodextrin matters more than checking for sugar.
Resistant Maltodextrin Is a Different Ingredient
There is a product called resistant maltodextrin (sometimes labeled as “soluble corn fiber” or by the brand name Fibersol) that behaves very differently in the body. Unlike standard maltodextrin, resistant maltodextrin is chemically modified so your digestive enzymes can’t fully break it down. It functions more like a soluble fiber, and a meta-analysis of 37 trials found that 6 grams of resistant maltodextrin reduced the blood sugar response to starchy foods by roughly 10 to 20%.
Resistant maltodextrin is often counted as fiber rather than net carbs, which means it has a much smaller impact on blood sugar and insulin. Some keto-labeled products use resistant maltodextrin intentionally for this reason. The key is reading the label carefully: “maltodextrin” and “resistant maltodextrin” or “soluble corn fiber” are not the same thing. If the ingredient list says just “maltodextrin,” it’s the standard version and it will affect your blood sugar like glucose.
Gut Health Concerns Beyond Ketosis
Even setting aside ketosis, maltodextrin may cause problems in the gut. Research published in PubMed Central describes maltodextrin as a “modern stressor of the intestinal environment.” In animal studies, maltodextrin consumption triggered stress responses in intestinal cells that damaged the protective mucus layer lining the gut. This mucus barrier normally keeps bacteria from contacting intestinal walls directly. When it thins, inflammation increases.
Separately, maltodextrin has been shown to promote biofilm formation by certain bacteria associated with Crohn’s disease and to encourage bacteria to penetrate the inner mucus layer of the colon, a process called microbiota encroachment. These effects appear to be independent of major shifts in overall bacterial diversity, meaning maltodextrin can cause gut damage without obviously changing which bacteria are present.
Better Alternatives for Keto
If you’re looking for sweeteners or bulking agents that won’t disrupt ketosis, several options have minimal impact on blood sugar and insulin:
- Erythritol has a glycemic index near zero and is excreted largely unchanged. It provides bulk similar to sugar in baking.
- Allulose tastes and behaves like sugar in recipes but is not metabolized for energy. It has roughly zero net carb impact.
- Monk fruit extract is intensely sweet with no calories or carbs, though it needs a bulking agent (often erythritol) for cooking.
- Stevia is another zero-calorie, zero-carb option, though some people notice a bitter aftertaste.
For thickening sauces or soups, xanthan gum, guar gum, or glucomannan (konjac root fiber) work well without adding carbs. These are commonly used in keto cooking as direct replacements for the textural role maltodextrin plays in processed foods.
