Is Medium Rare Pork Safe? What the Science Says

Medium rare pork, cooked to an internal temperature of 145°F (63°C) with a three-minute rest, is considered safe by the USDA for whole muscle cuts like chops, steaks, and roasts. At that temperature, pork will often look pink in the center, which surprises people who grew up hearing that pork must be cooked until completely white throughout. That old advice was rooted in a real parasite threat that has essentially disappeared from commercial pork in the United States.

Why the Rules Changed

For decades, home cooks were told to cook pork to 160°F or higher to kill a parasite called Trichinella, which causes the illness trichinosis. That concern made sense at the time, but modern farming has virtually eliminated the risk. A USDA survey tested 3.2 million commercially raised pigs across twelve processing facilities over 54 months and found zero animals infected with Trichinella. Statistically, that puts the prevalence at less than one in a million.

With that risk gone, the USDA lowered its recommended temperature for whole cuts of pork to 145°F in 2011, the same target as beef steaks. The result is juicier, slightly pink pork that is safe to eat, provided you follow one important rule: let the meat rest for three minutes after removing it from heat. During that rest period, the internal temperature holds steady or continues to climb slightly, which finishes off harmful bacteria.

What 145°F Pork Actually Looks Like

Pork cooked to 145°F will often have a blush of pink in the center. This is not the same as raw or truly undercooked meat. The color can vary quite a bit depending on factors you can’t see, including the pH of the muscle and how the animal was raised. Some pork chops will look pink at 165°F, while others turn completely white before they even reach 145°F.

This means color alone tells you almost nothing about safety. A chop that looks perfectly “done” could actually be undercooked, while a pink one might be well past the safe threshold. The only reliable method is a meat thermometer inserted into the thickest part of the cut, away from bone and fat. Most food thermometers are accurate to within 2 to 4 degrees, which is precise enough for home cooking as long as you place them correctly.

Ground Pork Is a Different Story

The 145°F guideline applies only to whole muscle cuts. Ground pork should still be cooked to 160°F with no rest time needed. The reason is straightforward: when meat is ground, bacteria that were only on the surface get mixed throughout. A whole pork chop only needs its exterior and a safe interior temperature to be safe, but ground pork can harbor bacteria in every bite. Serving a pink pork burger is genuinely risky in a way that a pink pork chop is not.

Risks That Still Exist

While Trichinella is essentially gone from commercial pork, other pathogens are not. Yersinia enterocolitica, a bacterium commonly linked to raw or undercooked pork, causes intestinal infections with fever, abdominal pain, and diarrhea. Salmonella is another concern. Both are destroyed at 145°F when the meat rests properly, so following the USDA guideline handles them.

Hepatitis E virus is a less familiar but more stubborn problem. Research published in Applied and Environmental Microbiology found that heating contaminated pork to 62°C (about 144°F) had “almost no effect” on inactivating the virus, even after extended cooking times. Complete inactivation required reaching 71°C (160°F) and holding that temperature for 20 minutes. Hepatitis E in pork is rare in the U.S. but more common in parts of Europe and Asia, particularly in liver and organ meats. If you eat pork liver pâté or similar products, cooking them well beyond 145°F is important.

Wild Boar and Game Pork Need More Heat

Everything above applies to commercially farmed pork. Wild boar and feral pigs are a completely different situation. These animals can still carry Trichinella and other parasites that have been eliminated from commercial herds. If you hunt or are served wild pig, cook it to at least 160°F throughout. The USDA’s relaxed guidelines were based specifically on data from farm-raised animals living in controlled environments.

Who Should Skip Pink Pork

Pregnant women face a specific risk from Toxoplasma gondii, a parasite found in raw and undercooked meat, especially pork, lamb, and venison. The FDA recommends pregnant women cook pork to 160°F (71°C), not just 145°F. Toxoplasma can cross the placenta and harm a developing baby, so the extra caution is warranted. The same higher temperature is a smart precaution for anyone with a weakened immune system, including people undergoing chemotherapy, organ transplant recipients, and those living with HIV.

How to Get It Right at Home

Insert a digital meat thermometer into the thickest part of the chop or roast, avoiding bone, fat, and gristle. For thin cuts like boneless chops, push the thermometer in through the side so the sensor reaches the center rather than poking straight down and missing the middle. For large or irregularly shaped roasts, check the temperature in several spots.

Pull the pork off heat when it hits 145°F, then let it sit for at least three minutes before cutting. If you slice into it immediately, you skip the rest period that finishes the job. You also lose more juice. Those three minutes are doing real food safety work: the residual heat continues to destroy bacteria even though the pork is no longer over a flame.

If your thermometer reads a few degrees under 145°F, put the pork back on the heat rather than hoping the rest period will make up the difference. A thermometer that’s off by a couple of degrees in the wrong direction, combined with a skipped rest, could leave you in genuinely unsafe territory.
