Moonshine is generally gluten free, even when it’s made from grains that contain gluten. The distillation process removes proteins, including gluten, from the final spirit. Both the FDA and the Alcohol and Tobacco Tax and Trade Bureau (TTB) confirm that distilled spirits made from gluten-containing grains can be labeled “gluten-free” as long as good manufacturing practices are followed. That said, there are a few real-world scenarios where gluten can sneak back in.
Why Distillation Removes Gluten
Gluten is a protein, and proteins are too heavy to evaporate during distillation. When a fermented mash is heated, the alcohol turns to vapor and rises through the still, leaving behind water, grain solids, and proteins. The vapor is then cooled back into liquid. The result is a spirit that contains no detectable protein or protein fragments.
This matters because moonshine can be made from corn (which is naturally gluten free), but many traditional recipes also include barley malt or rye to help convert starches into fermentable sugars. Even when those gluten-containing grains are part of the mash, the distillation step strips the gluten out. The FDA has confirmed that protein testing can verify the absence of gluten in a distillate regardless of whether it was made from gluten-containing ingredients.
What the Mash Is Made From
Most moonshine starts with corn as the primary grain, which is inherently gluten free. A classic corn whiskey mash might be 80% or more corn. Some recipes add malted barley (contains gluten) or rye (contains gluten) to improve flavor or fermentation efficiency. Other moonshine, sometimes called “sugar shine,” skips grain entirely and ferments plain sugar and water. Sugar shine never contacts gluten-containing ingredients at all, making it the simplest option if you want to avoid any uncertainty.
Regardless of which base is used, the distillation process should produce a gluten-free spirit. The starting grain matters far less than what happens during and after distillation.
Where Gluten Can Sneak Back In
The risk with moonshine isn’t the distillation itself. It’s what happens afterward. Gluten can be reintroduced in a few ways:
- Flavorings and additives. Flavored moonshine (apple pie, peach, cinnamon) often has ingredients mixed in after distillation. Most fruit, honey, and spice additions are naturally gluten free, but thickeners, malt-based flavorings, or certain commercially produced flavor extracts could contain gluten. If the label doesn’t specify, you can’t be sure.
- Cross-contact in the facility. A craft distillery that processes both grain-based whiskey and corn moonshine on the same equipment may introduce traces of gluten. Shared fermentation vessels, tubing, or storage containers are potential sources.
- Barrel aging. Some moonshine is aged or finished in barrels that previously held beer or other malt beverages. The Gluten Intolerance Group notes that spirits can encounter gluten or traces of gluten after distillation through barrel contact.
Plain, unflavored moonshine straight from the still carries the least risk. The more processing steps between distillation and the bottle, the more opportunities for gluten to be reintroduced.
Commercial Moonshine Brands
Legal commercial moonshine (brands like Ole Smoky, Midnight Moon, or Sugarlands) is produced under regulated conditions. The TTB requires that any producer making a “gluten-free” claim be prepared to prove that raw materials, production facilities, storage materials, and finished products are free from gluten cross-contact. If the label says “gluten-free,” the producer has taken on the responsibility of verifying that claim.
Not all brands carry a gluten-free label, though. Some simply don’t bother with the certification process. That doesn’t necessarily mean the product contains gluten. It means the company hasn’t gone through the steps to make the claim officially. If you have celiac disease and a brand doesn’t specify, reaching out to the manufacturer directly is the most reliable way to get a clear answer.
Homemade Moonshine Is Less Predictable
If you’re buying moonshine from a friend, a farmers market, or any informal source, the gluten question gets harder to answer. The science of distillation still applies, but “good manufacturing practices” is doing a lot of heavy lifting in that FDA ruling. A poorly run still, a low-quality distillation that allows liquid to splash into the collection vessel, or sloppy handling afterward could all compromise the final product. There’s no label to check and no testing to confirm what’s in the jar.
For someone with celiac disease, homemade moonshine from a grain-based mash carries more uncertainty than a tested commercial product. Homemade sugar shine, on the other hand, sidesteps the issue entirely since no gluten-containing ingredients are involved at any stage.
The Bottom Line for Celiac Disease
Major celiac disease organizations, including the Celiac Disease Foundation and Beyond Celiac, consider pure distilled spirits safe for people on a gluten-free diet. Beyond Celiac states plainly that “pure, distilled liquor, even if made from wheat, barley, or rye, is considered gluten-free.” The Celiac Disease Foundation’s CEO specifically thanked regulators for “clarifying the safety of distilled spirits for those who must follow a gluten-free diet.”
That said, some people with celiac disease report reacting to grain-based distilled spirits despite the science suggesting they shouldn’t. Whether this is a sensitivity to trace compounds below detection thresholds, a reaction to other components in the spirit, or something else entirely isn’t well understood. If you’ve had trouble with grain-based spirits in the past, sticking with corn-only or sugar-based moonshine is a practical workaround that eliminates the variable altogether.
