Is Nutmeg Bad for You? Risks and Safe Amounts

Nutmeg is perfectly safe in the small amounts used in cooking, typically a pinch or quarter teaspoon per recipe. Problems start when someone consumes roughly 5 grams or more, about one to two teaspoons of ground nutmeg, in a single sitting. At that point, a compound in nutmeg called myristicin can trigger a range of unpleasant and potentially dangerous symptoms affecting the brain, heart, and digestive system.

Why Nutmeg Becomes Toxic in Large Amounts

Myristicin is the primary compound behind nutmeg’s toxic effects. Once your body metabolizes it, one of the byproducts acts on the central nervous system in ways that resemble hallucinogenic drugs like mescaline. This is why nutmeg has occasionally been misused as a cheap, legal high, most notably in a 2020 social media trend where teenagers filmed themselves drinking large amounts of powdered nutmeg dissolved in water.

Myristicin also produces anticholinergic effects, meaning it blocks a key chemical messenger in the nervous system. This disruption is what causes many of the physical symptoms: dry mouth, dilated pupils, rapid heart rate, and difficulty urinating. It’s the same class of reaction you’d see from certain prescription drug overdoses, which is why nutmeg poisoning can initially confuse emergency physicians trying to identify the cause.

How Much Is Too Much

As little as 5 grams of nutmeg powder, roughly one to two teaspoons, can produce toxic symptoms. The range considered dangerous is 5 to 30 grams, though even doses as high as 20 to 80 grams have not typically been life-threatening. There are no FDA regulations setting a maximum safe dose for nutmeg in food or supplements. For context, most recipes call for a quarter teaspoon or less, which comes out to about 0.5 grams. You’d have to deliberately consume ten times a normal cooking amount before reaching the danger zone.

Poison center records include cases like a man who stirred ten tablespoons of nutmeg into a cup of coffee and a 16-year-old who consumed 25 grams after reading it was a “colon cleanser.” These are extreme, intentional doses far beyond anything you’d encounter in a pumpkin pie or béchamel sauce.

What Nutmeg Poisoning Feels Like

Symptoms typically appear three to eight hours after ingestion, which is part of what makes nutmeg misuse particularly risky. People sometimes take a second dose thinking the first didn’t work, only to have both hit at once. The effects can last up to 48 hours, though the worst of the mental confusion usually fades within about ten hours. Physical symptoms like dry mouth and urinary retention can linger for a day and a half.

The symptom list spans several body systems:

  • Neurological: hallucinations, agitation, drowsiness, dizziness, blurred vision, anxiety, and restlessness
  • Cardiovascular: rapid heart rate, high or low blood pressure, flushing
  • Gastrointestinal: nausea, vomiting, diarrhea, burning abdominal pain
  • Other: dry mouth and skin, fever, dilated pupils, jaw spasms, tremors

In severe cases, people have become verbally and physically aggressive. One documented patient arrived at the hospital with a heart rate of 129 beats per minute, a fever of 101°F, and pupils that were dilated and barely responding to light.

Liver Effects at High Doses

Beyond the immediate symptoms, large amounts of nutmeg can stress the liver. Research on high-dose nutmeg exposure found that it significantly increases the activity of liver enzymes responsible for processing toxins. When these enzymes ramp up too aggressively, they generate oxidative stress, essentially overwhelming the liver’s built-in defenses. This leads to damage in liver tissue and disrupts normal fat metabolism. Importantly, this effect was dose-dependent: it showed up at very high doses but not at lower ones, reinforcing that normal culinary use poses no liver risk.

Concerns During Pregnancy

Nutmeg contains small amounts of safrole and methyleugenol, compounds classified as potentially carcinogenic. Its essential oil has been linked to reduced fertility in research settings. While a dash of nutmeg in holiday baking is unlikely to cause harm, concentrated nutmeg oil or large quantities of the spice are worth avoiding during pregnancy. The myristicin content has historically raised concerns about uterine stimulation, though documented cases of harm at culinary doses are essentially nonexistent.

The Bottom Line on Cooking With Nutmeg

If you’re using nutmeg the way it’s meant to be used, as a spice measured in fractions of a teaspoon, there’s nothing to worry about. The gap between a normal serving (half a gram or less) and a toxic dose (5 grams or more) is wide enough that accidental poisoning from food is virtually impossible. The real risk exists only when someone deliberately consumes tablespoons of the stuff, whether chasing a high, following bad internet advice, or misunderstanding a “natural remedy.” Nutmeg belongs in your spice rack. It just doesn’t belong in your coffee by the tablespoon.
