Olive oil is widely accepted as paleo. It’s one of the most recommended fats in the paleo community, and for good reason: it’s minimally processed, rich in monounsaturated fat, and packed with protective plant compounds that align well with the diet’s emphasis on whole, nutrient-dense foods.
Why Olive Oil Fits the Paleo Framework
The paleo diet centers on foods that require minimal industrial processing: meat, fish, vegetables, fruits, nuts, and natural fats. Olive oil, particularly extra virgin, passes this test easily. The olives are ground into a paste in a mixer at temperatures around 27°C (about 80°F), then separated in a centrifuge to pull the oil away from the water and solids. No chemical solvents, no high heat, no bleaching. The result goes straight into a bottle.
This stands in contrast to seed oils like soybean, canola, and corn oil, which the paleo diet specifically excludes. Those oils typically require chemical extraction with hexane, deodorizing, and refining at high temperatures. The gap between “crush olives, collect oil” and that kind of industrial processing is exactly the distinction paleo draws between acceptable and unacceptable fats.
The Fat Profile Matters
One of the paleo diet’s core nutritional concerns is reducing omega-6 fatty acid intake relative to omega-3s. This is the main reason seed oils are off the table. Olive oil sidesteps this issue because its fat composition is dominated by monounsaturated fat, not polyunsaturated omega-6.
Roughly 68% to 76% of olive oil’s fatty acids are monounsaturated, with only about 7% to 14% polyunsaturated (depending on the cultivar). The omega-6 content, mostly linoleic acid, ranges from about 6.7% to 13.4%, while omega-3 (alpha-linolenic acid) sits below 1%. That’s a modest amount of omega-6 in absolute terms, especially compared to something like soybean oil, which can be over 50% omega-6. For paleo purposes, olive oil is considered a neutral-to-beneficial fat rather than a problematic source of inflammatory polyunsaturated fats.
Anti-Inflammatory Compounds in Extra Virgin
Extra virgin olive oil contains a compound called oleocanthal that acts as a natural anti-inflammatory. If you’ve ever felt a peppery sting at the back of your throat when tasting good olive oil, that’s oleocanthal activating a specific receptor. It works by blocking the same inflammation-driving enzymes that ibuprofen targets. In lab studies, oleocanthal actually outperformed ibuprofen at equal concentrations, inhibiting 41% to 57% of enzyme activity compared to ibuprofen’s 13% to 18%.
Beyond that direct anti-inflammatory action, oleocanthal reduces the production of several inflammatory signaling molecules in the body, including ones involved in joint inflammation. Early research has also explored its potential role in brain health, showing it may help clear the protein plaques associated with Alzheimer’s disease. These properties make extra virgin olive oil especially appealing within a paleo framework that prioritizes reducing chronic inflammation.
Extra Virgin vs. Refined: Not All Olive Oil Is Equal
The paleo-friendly status of olive oil really applies to extra virgin. Refined olive oil, sometimes labeled “light” or “pure,” goes through additional processing that strips away many of the antioxidants and polyphenols that make the oil valuable. Extra virgin olive oil is cold-pressed within 24 hours of harvest and must meet strict quality standards, including a maximum free acidity of 0.8% under international standards (0.5% in the U.S.).
Refined olive oil won’t harm you, and it still has a similar fat profile. But from a paleo perspective, choosing extra virgin gets you the full package of protective compounds that processing removes. If you’re following paleo specifically for its anti-inflammatory benefits, this distinction matters.
Cooking With Olive Oil on Paleo
A common concern is whether olive oil can handle cooking heat. High-quality extra virgin olive oil with low acidity has a smoke point around 207°C (405°F), which comfortably covers sautéing, roasting, and pan-frying. Standard extra virgin comes in around 191°C (375°F). Since ideal frying temperature sits around 180°C, extra virgin olive oil works well for most everyday cooking.
The antioxidants in olive oil actually help it resist heat degradation better than many other oils. The phenolic compounds are particularly heat-stable and remain intact at typical cooking temperatures. Vitamin E does break down around 180°C, but the polyphenols that give olive oil its unique health benefits hold up longer. For high-heat methods like searing or grilling where you need temperatures above 200°C, avocado oil (smoke point around 271°C) is a better paleo-friendly choice.
How It Compares to Other Paleo Fats
Olive oil is one of several fats that fit comfortably into paleo eating, and each has its best use.
- Avocado oil has a nearly identical nutritional profile to olive oil, with 9.88 grams of monounsaturated fat per tablespoon versus olive oil’s 9.58 grams. Its advantage is a much higher smoke point, making it the go-to for high-heat cooking. Its disadvantage is that it lacks the unique polyphenols found in extra virgin olive oil.
- Coconut oil is mostly saturated fat, which makes it extremely heat-stable but gives it a very different nutritional profile. It’s popular in paleo for baking and medium-heat cooking.
- Animal fats like tallow, lard, and ghee are staples of paleo cooking, especially for roasting and frying. They’re rich in fat-soluble vitamins and highly stable at cooking temperatures, but they don’t offer the anti-inflammatory polyphenols that olive oil provides.
Most paleo eaters keep extra virgin olive oil as their default fat for salad dressings, drizzling over finished dishes, and low-to-medium-heat cooking, then reach for avocado oil or animal fats when they need higher heat. Olive oil also helps your body absorb fat-soluble vitamins A, D, E, and K from vegetables, making it an ideal pairing with the large salads and roasted vegetable dishes common in paleo meals.
