Palm kernel oil is one of the most saturated fats in the food supply, with roughly 82% of its fat content coming from saturated fatty acids. That puts it in the same category as coconut oil and well above butter in terms of saturation. For most people eating a typical diet, palm kernel oil is not a health-promoting fat, and major health organizations recommend replacing tropical oils like it with unsaturated plant oils.
What Makes Palm Kernel Oil So High in Saturated Fat
Palm kernel oil comes from the seed (kernel) inside the oil palm fruit, not from the fruit’s flesh. That distinction matters because the two oils have very different compositions. Regular palm oil has a roughly even split between saturated and unsaturated fats, with palmitic acid as its main saturated fat. Palm kernel oil, by contrast, contains up to 50% lauric acid and about 15% myristic acid, both of which raise cholesterol levels. Its fatty acid profile is strikingly similar to coconut oil, which is about 92% saturated fat.
Because of its high lauric acid content, palm kernel oil is sometimes called a “lauric oil” alongside coconut oil. Lauric acid does follow a slightly different metabolic pathway than longer-chain saturated fats, and some researchers have argued it has a smaller effect on blood cholesterol. But the total package of saturated fatty acids in palm kernel oil, including myristic and palmitic acids, still pushes cholesterol in the wrong direction for heart health.
How It Affects Your Cholesterol
A meta-analysis published in The Journal of Nutrition found that palm oil raised LDL (“bad”) cholesterol by a meaningful amount compared to unsaturated vegetable oils like canola, soybean, and olive oil. In randomized trials, the increase averaged about 0.31 mmol/L. Palm kernel oil, with its even higher saturated fat content, would be expected to perform at least as poorly.
Palm oil did also raise HDL (“good”) cholesterol slightly, by about 0.02 mmol/L compared to low-saturated-fat oils. That small bump doesn’t offset the larger rise in LDL. The net effect on your cardiovascular risk profile is unfavorable. One study included in a World Health Organization review found that palm oil intake was associated with 26% higher odds of a first heart attack compared to other vegetable oils, though that came from a single study with about 2,000 participants followed over nine years.
Palm Kernel Oil as a Trans Fat Replacement
When food manufacturers began removing trans fats from processed foods, many turned to palm oil and palm kernel oil as replacements. Both oils are naturally solid or semi-solid at room temperature, which makes them useful in baked goods, snack bars, candy coatings, and other products that need a firm texture without hydrogenation.
A USDA-supported study tested whether this swap actually improved health outcomes. It didn’t. Diets enriched with palm oil produced the same unfavorable levels of LDL cholesterol and a protein that carries bad cholesterol through the bloodstream as diets enriched with partially hydrogenated soybean oil (the classic trans fat source). Both performed worse than diets built around canola or soybean oils. The researchers concluded that palm oil is not a healthy substitute for trans fats. Palm kernel oil, being even more saturated, offers no advantage either.
What About Antioxidants and Vitamin E?
You may have seen claims that palm oils contain valuable antioxidants, particularly a form of vitamin E called tocotrienols. This is true of crude palm oil from the fruit’s flesh, which contains 700 to 800 mg/kg of vitamin E compounds, about 70% of which are tocotrienols. These compounds have shown anti-inflammatory and antioxidant properties in lab studies.
Palm kernel oil, however, is not the same product. It comes from the seed rather than the fruit pulp, and its antioxidant profile is far less impressive. More importantly, most palm kernel oil used in food products is refined, which strips away much of whatever antioxidant content existed in the crude form. The vitamin E argument applies primarily to unrefined, red palm oil, not to the palm kernel oil found in packaged foods.
Processing Contaminants in Refined Oils
Refining any vegetable oil at high temperatures can generate processing contaminants. Two types are particularly concerning in palm-based oils: compounds called 3-MCPD esters and glycidyl esters. Both form during the deodorization step of refining, and the European Food Safety Authority has flagged them as potential health concerns. Physical refining, the cheaper and more common method, may not effectively reduce these contaminants. Chemical refining performs better, cutting glycidyl ester levels by roughly 73% and 3-MCPD esters by about 52% in one study on palm oil.
These contaminants aren’t unique to palm kernel oil. They appear in all refined vegetable oils to varying degrees. But palm-based oils tend to generate higher levels because of the temperatures required during processing, which adds another layer of concern beyond the saturated fat issue.
How It Compares to Other Oils
The American Heart Association’s 2026 dietary guidance groups tropical oils together and recommends replacing them with nontropical plant oils like olive, canola, and soybean oil. Here’s how palm kernel oil stacks up:
- Palm kernel oil (82% saturated fat): Very high in lauric and myristic acids. Raises LDL cholesterol. Used mostly in processed foods for texture.
- Coconut oil (92% saturated fat): Nearly identical fatty acid profile to palm kernel oil, with 49% lauric acid. Despite marketing as a health food, it raises LDL cholesterol and is generally considered harmful to heart health by lipid researchers.
- Palm oil (50% saturated fat): More balanced than palm kernel oil, with significant amounts of oleic acid (a monounsaturated fat). Still raises LDL compared to unsaturated oils, but less dramatically.
- Olive oil (14% saturated fat): High in monounsaturated fat. Consistently associated with better cardiovascular outcomes in large studies.
The AHA recommends keeping saturated fat below 10% of total daily calories. For someone eating 2,000 calories a day, that’s about 22 grams. A single tablespoon of palm kernel oil contains roughly 11 grams of saturated fat, consuming nearly half that daily budget in one serving.
Where You’re Actually Eating It
Most people don’t cook with palm kernel oil at home. You encounter it in ingredient lists: chocolate coatings, candy bars, ice cream, coffee creamers, whipped toppings, instant noodles, and baked snack foods. About 61% of palm kernel oil produced globally goes into food products, with the rest used in cosmetics and industrial applications.
Because it shows up in small amounts across many processed foods, your total intake can add up without you realizing it. If you’re trying to reduce saturated fat for heart health, checking ingredient labels for “palm kernel oil” or “palmiste oil” is worth the effort. It won’t always be the biggest contributor to your saturated fat intake on any given day, but in a diet heavy in packaged snacks and convenience foods, it accumulates.
