Is Peanut Oil Healthy? Benefits, Risks, and Uses

Peanut oil is a reasonably healthy cooking oil, but with some important caveats. It’s rich in monounsaturated fat and vitamin E, holds up well at high temperatures, and has been linked to lower LDL cholesterol. The catch is its extremely lopsided ratio of omega-6 to omega-3 fatty acids, which can promote inflammation if your overall diet isn’t balanced.

Fat Composition and Calories

A tablespoon of peanut oil contains about 120 calories and 14 grams of fat, which is standard for any cooking oil. What sets oils apart is the type of fat they contain, and peanut oil lands in a middle tier. Roughly 41% of its fatty acids are oleic acid, the same heart-healthy monounsaturated fat found in olive oil. Another 39% is linoleic acid, a polyunsaturated omega-6 fat. The remaining 20% or so is saturated fat, mostly from palmitic acid.

That profile is decent but not exceptional. Olive oil, by comparison, contains significantly more monounsaturated fat and less omega-6. Peanut oil’s balance of fats puts it ahead of soybean or corn oil (which are heavier in omega-6) but behind olive and avocado oil for overall heart health.

The Omega-6 Problem

This is peanut oil’s biggest nutritional weakness. It contains almost no omega-3 fatty acids, with omega-3 making up less than 0.5% of its fat content. That creates an omega-6 to omega-3 ratio somewhere around 375:1 to 430:1. The World Health Organization recommends a dietary ratio between 5:1 and 10:1.

Excessive omega-6 intake relative to omega-3 has been linked to increased risk of cardiovascular disease, diabetes, depression, and immune dysfunction. This doesn’t mean peanut oil is dangerous in moderate amounts, but if you use it as your primary cooking oil and don’t eat much fatty fish, walnuts, or flaxseed, it can push your overall dietary ratio further out of balance. Using peanut oil occasionally for stir-fries or deep frying while relying on olive oil day to day is a practical way to get its benefits without overdoing omega-6.

Effects on Cholesterol

Human clinical trials have shown that peanut oil lowers total cholesterol and LDL (“bad”) cholesterol without reducing HDL (“good”) cholesterol. In animal studies, diets that included peanut oil significantly slowed the buildup of cholesterol esters in blood vessels, a key marker of atherosclerosis, compared to control diets. These benefits likely come from its monounsaturated fat content and its plant sterols, which block cholesterol absorption in the gut.

Peanut oil contains about 320 milligrams of phytosterols per 100 grams. The most abundant is beta-sitosterol, which accounts for roughly 190 mg of that total. These compounds compete with dietary cholesterol for absorption in your intestines, effectively reducing how much cholesterol enters your bloodstream.

Vitamin E and Antioxidants

Peanut oil is a good source of vitamin E, delivering about 11% of the daily value per tablespoon. Vitamin E acts as an antioxidant, protecting cells from damage caused by free radicals. This is particularly relevant during cooking, where the oil’s own antioxidants help prevent the formation of harmful oxidation byproducts.

Cold-pressed peanut oil retains more of these protective compounds. Chemical refining reduces total tocopherol (vitamin E) content by about 10%, and likely strips out other minor antioxidants as well. If you’re using peanut oil in dressings or low-heat cooking where its flavor works, cold-pressed versions offer a small nutritional edge.

High-Heat Cooking Performance

Refined peanut oil has a smoke point of 450°F (232°C), making it one of the better choices for deep frying, stir-frying, and searing. Unrefined (cold-pressed) peanut oil smokes at a much lower 320°F (160°C), so it’s not suitable for high-heat methods.

Beyond smoke point, peanut oil is relatively stable when heated for extended periods. Oils extracted from roasted peanuts showed induction periods (a measure of how long an oil resists breaking down) of 8 to 10 hours under accelerated oxidation testing. Roasting the peanuts before extraction actually increases the oil’s resistance to heat degradation. For home cooking, where oil is rarely held at high temperature for more than 20 to 30 minutes, refined peanut oil performs well without producing excessive harmful compounds.

Refined Peanut Oil and Allergies

If you have a peanut allergy, the type of peanut oil matters enormously. Highly refined peanut oil has its proteins removed during processing, and the FDA does not classify it as a major allergen. Under federal labeling law, highly refined oils derived from allergenic foods are exempt from allergen warnings because they no longer contain the proteins that trigger reactions.

Cold-pressed, expelled, or “gourmet” peanut oil is a different story. These minimally processed versions retain peanut proteins and can cause severe allergic reactions. If you have a peanut allergy, avoid any peanut oil that isn’t explicitly labeled as highly refined, and be cautious at restaurants where the type of oil used may not be clear.

How It Compares to Other Cooking Oils

  • Versus olive oil: Olive oil has more monounsaturated fat, a better omega-6 to omega-3 ratio, and higher polyphenol content. Peanut oil wins on smoke point and neutral flavor for frying.
  • Versus canola oil: Canola has a much better omega-6 to omega-3 ratio (roughly 2:1) and a similar smoke point when refined. Peanut oil has a slight edge in oxidative stability during prolonged frying.
  • Versus vegetable/soybean oil: Both are high in omega-6, but peanut oil contains more monounsaturated fat and tends to be more stable at high temperatures.

Peanut oil works best as a specialty oil for frying and Asian-style cooking rather than an everyday default. For general use, olive oil or canola oil offers a more favorable nutritional profile. When you do reach for peanut oil, its high smoke point, pleasant flavor, and cholesterol-lowering properties make it a solid choice for the right dish.
