Quinoa seeds are naturally coated in saponins, bitter compounds that act as the plant’s built-in pest deterrent. These saponins can irritate the lining of the digestive tract in a way that has nothing to do with FODMAPs. Animal studies have shown that quinoa saponins at higher concentrations have a direct disruptive effect on intestinal mucosal cells, with bitter quinoa varieties being the worst offenders. At very low doses (under 5 mg per kilogram of body weight), saponins appear harmless, but at higher doses they can contribute to gastrointestinal inflammation.

Most store-bought quinoa is pre-rinsed, but not always thoroughly. Rinsing your quinoa under cold running water for 30 to 60 seconds before cooking removes the majority of surface saponins.
