Is Salmon High in Sulfur? Diet and Health Facts

Salmon is a high-sulfur food. It contains roughly 335 mg of methionine per serving, placing it in the “high methionine” category (above 300 mg) used by clinical dietitians. Methionine is one of the two main sulfur-containing amino acids in food, and salmon delivers a substantial amount of it alongside other sulfur compounds found naturally in fish.

Where Salmon’s Sulfur Comes From

The sulfur in salmon comes primarily from two amino acids: methionine and cysteine. These are building blocks of protein, and because salmon is a protein-dense food, it’s naturally rich in both. Methionine is considered an essential amino acid, meaning your body can’t make it and must get it from food. Cysteine can be made from methionine in the body, but you also absorb it directly from protein-rich foods like fish.

Beyond amino acids, fish and meat are among the top dietary contributors of total sulfur. Research tracking sulfur intake across food groups found that meat and fish together can account for 38 to 63 percent of a person’s total daily sulfur intake, depending on how much they eat. That puts salmon in the same league as other animal proteins like beef, chicken, eggs, and cod when it comes to sulfur content.

How Salmon Compares to Other High-Sulfur Foods

Salmon isn’t uniquely high in sulfur compared to other animal proteins. Cod, chicken breast, beef, and eggs are all considered primary dietary sources of sulfur. The differences between these foods are relatively small. If you’re eating a serving of any animal protein, you’re getting a meaningful dose of sulfur-containing amino acids.

Plant foods also contribute sulfur, though typically less per serving. Cruciferous vegetables like broccoli, cauliflower, Brussels sprouts, and cabbage contain sulfur compounds, and wheat-based and starchy foods can contribute up to 47 percent of total sulfur intake simply because people eat them in larger quantities throughout the day. Dairy products also contribute, providing up to about 35 percent of total sulfur in some dietary patterns.

Why Sulfur From Salmon Matters for Your Body

Sulfur-containing amino acids aren’t just structural components of protein. They feed into a metabolic pathway that produces glutathione, the most abundant antioxidant your cells make. Cysteine is the key ingredient here. Your body uses it as the rate-limiting building block for glutathione, meaning the amount of cysteine available largely controls how much glutathione gets produced. Glutathione neutralizes reactive oxygen and nitrogen molecules that would otherwise damage cells, and it can be recycled and reused.

For a healthy adult, the World Health Organization recommends about 13 mg of sulfur amino acids per kilogram of body weight per day. For a 70 kg (154 lb) person, that works out to around 910 mg daily. A single serving of salmon provides a significant chunk of that through methionine alone, and a varied diet that includes other protein sources easily covers the rest.

Does Cooking Change the Sulfur Content?

Cooking does affect sulfur compounds in salmon, but the changes depend on which amino acid you’re looking at. Research published in the Journal of Agricultural and Food Chemistry found that cysteine breaks down readily when heated, releasing hydrogen sulfide (the compound responsible for that familiar “eggy” or sulfurous smell during cooking). Methionine, on the other hand, stays relatively stable and doesn’t decrease significantly with heat.

In practical terms, some of the sulfur in salmon shifts form during cooking. Proteins release small amounts of free amino acids as they break down, but some of those amino acids degrade at roughly the same rate they’re released. The total sulfur content of your cooked salmon isn’t dramatically different from raw, but the balance between intact amino acids and their breakdown products shifts. The sulfurous smell you sometimes notice while cooking fish is literally sulfur leaving the food as gas.

Salmon on a Low-Sulfur Diet

For most people, the sulfur in salmon is beneficial. But if you’re dealing with hydrogen sulfide-related digestive issues, some gastroenterologists recommend reducing sulfur intake. Fish, including salmon, appears on lists of foods to limit in low-sulfur dietary protocols.

That said, the guidance isn’t to eliminate animal protein entirely. Gastroenterology specialists suggest keeping portions to about 3 to 4 ounces of animal protein per meal and pairing it with low-sulfur vegetables. The goal is reduction, not complete avoidance. If you’ve been told to follow a low-sulfur diet, salmon in small portions may still fit, but larger servings would work against the purpose of the restriction.

If you don’t have sulfur sensitivity or a condition like hydrogen sulfide-related gut issues, there’s no reason to worry about the sulfur content of salmon. It’s a normal and necessary part of what makes fish a nutrient-dense protein source.
