Is Salmon High in Uric Acid or Safe for Gout?

Salmon is moderately high in purines, the compounds your body converts into uric acid. Raw Atlantic salmon contains about 211 mg of purines per 100 grams, and wild sockeye runs slightly higher at 217 mg per 100 grams. That places salmon in the moderate-to-high range for purine content, which matters if you’re managing gout or elevated uric acid levels. But the full picture is more nuanced than just the purine number.

How Salmon Compares to Other Protein Sources

Foods are generally grouped into three purine tiers: low (under 100 mg per 100g), moderate (100 to 200 mg), and high (over 200 mg). Fresh salmon sits right at the boundary between moderate and high. For context, organ meats like liver can exceed 400 mg per 100g, and certain shellfish climb above 300 mg. Chicken breast and beef tenderloin typically fall in the 100 to 150 mg range.

One detail worth noting: canned salmon contains dramatically less purines, just 13 mg per 100 grams according to USDA data. The canning process, which involves cooking the fish in liquid, likely leaches a significant portion of purines out of the meat and into the surrounding liquid that gets drained off. If you’re trying to keep salmon in your diet while limiting purines, canned salmon is a substantially different food from a purine standpoint.

What Happens to Uric Acid After Eating Fish

Eating fish regularly does raise uric acid levels in your blood. A large nationally representative study of Chinese adults found that people who ate fish once a week or more had measurably higher serum uric acid compared to people who never ate fish. The increase was roughly 20 µmol/L in men and 10 µmol/L in women, which is a meaningful bump if your levels are already near the threshold for gout (typically around 360 to 420 µmol/L depending on the guideline).

Interestingly, the purine load isn’t the only thing driving that increase. The same study found that about a third of the uric acid rise in men (35%) and about a quarter in women (27%) was actually explained by mercury accumulation from fish rather than purines alone. Mercury can impair your kidneys’ ability to filter uric acid out of the blood. This means the type and source of fish matters: fish with lower mercury levels may have less impact on uric acid than their purine content alone would suggest. Farmed Atlantic salmon is one of the lower-mercury options among commonly eaten fish.

How Cooking Method Changes the Risk

How you prepare salmon may matter as much as whether you eat it. A three-year follow-up study of Japanese adults found that eating raw fish (sashimi and sushi) or roasted fish was significantly associated with a higher risk of developing hyperuricemia, the medical term for chronically elevated uric acid. Boiled and fried fish showed no significant association with that risk.

The likely explanation is straightforward: boiling fish in water or broth causes purines to leach out of the flesh and into the cooking liquid. Purines are water-soluble compounds, so when you poach or simmer salmon, a meaningful portion of those purines ends up in the broth rather than on your plate. If you discard the cooking liquid, you’re eating lower-purine fish. Roasting and eating raw fish preserve the full purine content. Frying likely creates a similar but smaller leaching effect through moisture loss during cooking.

This gives you a practical tool: poaching or boiling salmon and discarding the liquid can meaningfully reduce your purine intake from that meal.

Omega-3s and Gout Inflammation

Salmon is one of the richest dietary sources of omega-3 fatty acids, which have strong anti-inflammatory properties. There’s been interest in whether these omega-3s could offset the purine load by reducing the inflammatory response that triggers gout flares. The biological reasoning is sound: omega-3s can interfere with the specific inflammatory pathway that uric acid crystals activate in your joints.

However, when this was tested in a clinical trial, the results were disappointing. Gout patients given omega-3 supplements had essentially the same number of flares, the same flare duration (about 7 days), and the same time to first flare as those given a placebo. So while omega-3s have general anti-inflammatory benefits, they don’t appear to meaningfully protect against gout attacks specifically. You shouldn’t count on salmon’s omega-3 content to cancel out its purine content.

Practical Guidance for Keeping Salmon in Your Diet

If you have gout or borderline-high uric acid, you don’t necessarily need to eliminate salmon entirely. A few strategies can help reduce the impact:

  • Choose canned salmon when possible, since it contains a fraction of the purines found in fresh salmon.
  • Poach or boil fresh salmon rather than grilling, roasting, or eating it raw, and discard the cooking liquid.
  • Watch portion size. The purine values above are per 100 grams, roughly a 3.5-ounce portion. A typical restaurant salmon fillet is 6 to 8 ounces, nearly doubling the purine load.
  • Space out servings rather than eating fish several days in a row, giving your kidneys time to clear uric acid between meals.

Salmon provides high-quality protein, omega-3 fats, and important nutrients like vitamin D and selenium. For most people with elevated uric acid, moderate portions of well-cooked salmon a couple of times per week are manageable. But if you’re in the middle of a gout flare or your uric acid levels are significantly elevated, it’s one of the higher-purine proteins and worth limiting until things are under better control.
