Common additives include sucralose, sorbitol, xylitol, erythritol, aspartame, and various amino acids like alanine and glycine. Flavored soju varieties go further, incorporating citric acid, fructose (sometimes as high-fructose corn syrup), stevia, and artificial flavor compounds.
This is where things get less straightforward. The exact list of all additives in a given soju product is not always fully disclosed to the public. Which Soju Is Safest for a Gluten-Free Diet
Your safest options are soju brands made from rice, sweet potato, or tapioca as the base ingredient, with minimal added flavorings. Traditional or craft soju that emphasizes a single base ingredient (commonly rice) and undergoes proper distillation is the lowest-risk choice. These products start gluten free and stay that way through production.
Flavored soju carries slightly more uncertainty because of the additional ingredients mixed in after distillation. If you’re highly sensitive, stick to unflavored varieties and check the label for any mention of wheat or barley. Plain soju from major Korean brands like Chamisul (made primarily from a blend that includes sweet potato and tapioca starches) is widely considered safe, though the exact formulations can shift over time.
If you have celiac disease and want to be thorough, look for the base ingredients on the bottle and avoid any product where the ingredient list is unclear or unavailable in a language you can read. The distillation itself is reliable protection, but the additives that come afterward are the variable you can’t always account for.
