What Reduces Iron Absorption From Steak
Calcium is the only nutrient known to inhibit absorption of both heme and non-heme iron. Taking a calcium supplement with a steak dinner reduced total iron absorption by about 25% in research conducted by the USDA. That dropped heme iron uptake from 49% to 40%. If you’re eating steak specifically to boost your iron intake, spacing out calcium supplements or dairy-heavy sides by an hour or two is a simple way to get more from your meal.
Tea and coffee contain polyphenols that interfere with non-heme iron absorption, but their effect on the heme iron in steak is much smaller. Still, if iron is a priority, water or juice makes a better mealtime drink than black tea.
Choosing the Best Cuts for Iron
The general rule: the darker and leaner the meat, the more iron it contains. Shank, round, and chuck cuts top the list for beef. If you’re open to game meats, venison and bison outperform beef across the board, with a venison top round steak delivering 4.31 mg and bison chuck reaching 4.13 mg per serving.
Tenderloin and ribeye, while popular, fall in the middle of the pack. They’re still good sources of iron, just not the very best if you’re optimizing specifically for that nutrient. Ground beef at 90% lean provides 2.3 mg per 3-ounce cooked patty, making even a burger a solid option.
Balancing Iron Intake With Red Meat Limits
Current health guidelines suggest keeping red meat consumption to an average of about 70 grams (cooked weight) per day, or roughly 500 grams per week. That’s about one modest serving daily.
