Is Stevia the Same as Splenda? Key Differences

Stevia and Splenda are not the same thing. They are two distinct sweeteners with different origins, different chemical structures, and different properties. Stevia comes from a plant, while Splenda is built from chemically modified sugar. Both replace table sugar with far fewer calories, which is why they often end up side by side on store shelves and in search results, but that’s where the similarities largely end.

Where Each One Comes From

Stevia is derived from the leaves of the stevia plant. The leaves are harvested, dried, and steeped in hot water to extract sweet-tasting compounds called steviol glycosides. These compounds are then purified to a high degree before being sold as a sweetener. It’s a plant extract, not something assembled in a lab.

Splenda is the brand name for sucralose, an artificial sweetener created by chemically altering regular sugar molecules. During manufacturing, some of the atoms in sugar are replaced with chlorine atoms. The result is a compound your body can’t break down for energy, so it passes through mostly undigested. Despite starting from sugar, the end product is a synthetic molecule that doesn’t exist in nature.

What’s Actually in a Packet

If you tear open a yellow Splenda packet, you might assume it’s pure sucralose. It isn’t. About 95% of the powder by volume is dextrose and maltodextrin, common fillers that add bulk so the packet is easy to measure and pour. The sucralose itself makes up roughly 1.1% of the contents. Those fillers are digestible carbohydrates, which is why a single one-gram packet of Splenda still contains about 3.4 calories, even though sucralose itself is calorie-free.

Stevia products vary more by brand. Some packets use similar bulking agents like erythritol or dextrose, while others contain only purified steviol glycosides. Checking the ingredient list matters more with stevia because formulations differ widely between brands like Truvia, PureVia, and store-brand options.

How Sweet They Are

Both sweeteners are dramatically sweeter than table sugar, but not by the same amount. Sucralose is roughly 600 times sweeter than sugar, according to FDA data. Steviol glycosides range from 200 to 400 times sweeter, depending on which specific glycoside is used. In practice, this means you need less of either one compared to sugar, but Splenda packs more sweetness drop for drop than stevia does.

That intensity gap also explains the taste difference. Many people find stevia has a bitter or licorice-like aftertaste, especially at higher concentrations. Splenda tends to taste closer to sugar for most people, though some detect a slight chemical note. Taste is subjective, and the only reliable way to figure out which one you prefer is to try both.

How They Handle Heat

This is a practical difference that matters if you bake. Stevia holds up well at high temperatures, remaining stable up to about 170°C (338°F) before it starts to break down. Sucralose-based products begin losing mass at a much lower temperature, around 65°C (149°F), which can affect sweetness and texture in recipes that require prolonged oven time.

Neither sweetener behaves exactly like sugar in baked goods, though. Sugar does more than sweeten: it browns, it adds moisture, it gives structure. Swapping in stevia or Splenda changes the texture, color, and sometimes the rise of whatever you’re making. Many bakers use a blend of sugar and their preferred sweetener to get closer to the expected result.

Effects on Blood Sugar and Gut Health

One reason people choose either sweetener is to reduce sugar intake, particularly if they’re managing blood sugar levels. Neither stevia nor sucralose delivers a significant glucose load on its own. However, the dextrose and maltodextrin fillers in Splenda packets are carbohydrates your body does process, so they can cause a small, brief bump in blood sugar. For most people this is negligible, but it’s worth knowing if you’re using several packets a day.

Research on gut health paints a more complicated picture. Animal studies have consistently found that sucralose can shift the balance of gut bacteria in unfavorable directions, including reducing populations of bacteria that help maintain the gut lining. Some human trials echo these concerns, while others show no significant changes. Stevia’s effects on gut bacteria are similarly mixed. Some studies suggest it could support beneficial bacterial strains, while animal research has found it can reduce microbial diversity. Neither sweetener has a clean bill of health on this front, and the science is still catching up to the widespread use of both products.

Regulatory Status in the U.S.

Both sweeteners are permitted for use in the United States, but through different regulatory pathways. Sucralose is one of six high-intensity sweeteners formally approved by the FDA as a food additive. High-purity steviol glycosides, on the other hand, are classified as “generally recognized as safe” (GRAS) based on notices submitted by manufacturers that the FDA has not objected to. The practical difference for consumers is minimal: both are legal and widely available.

One important distinction: the FDA only permits highly purified steviol glycosides. Whole stevia leaves and crude stevia extracts are not approved as sweeteners and are actually subject to an import alert. So if you see “stevia” on a product label, it refers to the refined extract, not ground-up leaves.

The Bigger Picture on Non-Sugar Sweeteners

In 2023, the World Health Organization recommended against using non-sugar sweeteners for weight control. That guidance applies to both stevia and sucralose, along with every other sugar substitute. The WHO’s concern isn’t that these sweeteners are toxic at normal doses, but that long-term use doesn’t appear to deliver lasting benefits for body weight and may be associated with other health risks over time.

That doesn’t mean you need to avoid them entirely. If choosing between a stevia-sweetened coffee and a sugar-loaded soda, the sweetener is almost certainly the better option in the moment. The WHO’s point is that relying on any non-sugar sweetener as a long-term weight management strategy isn’t well supported by the evidence. Reducing overall sweetness in your diet, from any source, is the approach they encourage instead.
