Muscle Meat Has Almost Zero
If you’re eating standard cuts of meat from the grocery store, you’re getting virtually no vitamin C. Raw chicken breast, chicken thighs, chicken wings, and drumsticks all register at 0 mg. The same goes for raw leg of lamb and grass-fed beef strip steak. Even after cooking, pork tenderloin provides only about 1.7 mg per serving, and ground pork comes in around 1.2 mg. How much depends on temperature and cooking time, but losses of 30 to 50% are typical for vitamin C in cooked foods. A well-done liver will retain less than a lightly seared one.
Processed Meats Can Be Misleading
Some processed meat products show surprisingly high vitamin C numbers in nutrition databases. Cooked kielbasa sausage, for example, lists nearly 60 mg per serving. Pastrami and canned roasted ham come in around 19 to 20 mg. These numbers don’t reflect naturally occurring vitamin C.
