Is Tuna Tartare Healthy? Nutrition, Mercury & Safety

Tuna tartare is one of the more nutritious dishes you’ll find on a restaurant menu. A 100-gram serving of raw yellowfin tuna delivers 23 grams of protein and less than 1 gram of fat, all for about 108 calories. The real question isn’t whether it’s healthy in a nutritional sense, but whether the risks of eating raw tuna (mercury, bacteria, parasites) change the calculus for you personally.

Nutritional Strengths

Raw tuna is essentially a pure protein source with almost no fat. That 108-calorie, 23-gram protein profile per 100 grams puts it on par with chicken breast, but with a major advantage: omega-3 fatty acids. Bluefin tuna, a common tartare choice, provides roughly 1,600 milligrams of EPA and DHA combined per 100-gram serving. Yellowfin delivers less, closer to 500 milligrams, but that still covers a meaningful chunk of the 250 to 500 milligrams most health organizations recommend daily for heart health.

These omega-3s help lower triglycerides, reduce inflammation, and support brain function. Because the tuna is served raw, none of these fats are degraded by cooking heat, so you’re getting the full benefit. Tuna is also a strong source of selenium, B vitamins (especially B12 and niacin), and vitamin D.

What gets added during preparation matters, too. A classic tartare uses sesame oil, soy sauce, and citrus. These contribute relatively few calories. Tartare served on fried wonton chips or with a heavy mayo-based sauce shifts the nutritional picture considerably, so the dish’s health value partly depends on what comes alongside the fish.

Mercury Is the Main Nutritional Concern

Tuna accumulates more mercury than most seafood because it’s a large predatory fish. How much depends heavily on the species. According to FDA monitoring data, skipjack tuna averages 0.144 parts per million of mercury, while yellowfin comes in at 0.354 ppm and bigeye at 0.689 ppm. Bigeye is nearly five times higher than skipjack.

For context, the FDA and EPA recommend that adults eat at least 8 ounces of seafood per week, choosing lower-mercury options when possible. Yellowfin falls into the “Good Choices” category, meaning one serving per week is a reasonable guideline. Bigeye tuna lands in a more restricted tier. If you’re eating tuna tartare once a week or less and it’s made with yellowfin or skipjack, mercury exposure is generally not a concern for most adults. If you’re eating it multiple times a week or the restaurant uses bigeye, exposure adds up faster.

Pregnant and breastfeeding women face stricter limits: 8 to 12 ounces per week from lower-mercury fish. Bigeye tuna is specifically on the “avoid” list for this group, and yellowfin should be limited to one serving per week at most.

Raw Fish Safety Risks

Eating any raw fish introduces risks that cooking eliminates. Parasites are the most straightforward concern. The FDA recommends that fish intended for raw consumption be frozen at -4°F (-20°C) for at least 7 days, or flash-frozen at -31°F (-35°C) and stored for 15 to 24 hours. Reputable restaurants and sushi suppliers follow these protocols, which effectively kill parasites. Fish labeled “sushi-grade” or “sashimi-grade” has typically undergone this treatment, though those terms aren’t formally regulated.

Bacterial contamination is harder to control. Tuna is particularly susceptible to a condition called scombroid poisoning, which happens when the fish sits at improper temperatures and bacteria convert a naturally occurring amino acid (histidine) into histamine. This can begin when fish is stored above 45°F for extended periods and accelerates at room temperature. Symptoms include facial flushing, rash, diarrhea, and a burning or peppery taste in the mouth. They usually resolve within a few hours, though severe reactions occasionally require treatment.

Carbon Monoxide-Treated Tuna

Some tuna sold in grocery stores and lower-end restaurants has been treated with carbon monoxide to maintain a bright red color. The gas itself poses no direct health risk when consumed. The problem is that it can mask spoilage. Normally, tuna turns brown as it ages, giving you a visual cue that it’s past its prime. Carbon monoxide-treated fish stays cherry red well beyond its actual shelf life, which means you can’t rely on color to judge freshness. This is especially relevant for tartare, since spoiled tuna is a prime setup for histamine buildup and scombroid poisoning. If you’re buying tuna to prepare tartare at home, ask your fishmonger whether the fish has been CO-treated and look for a “previously frozen” label that indicates proper parasite-killing protocols were followed.

Who Should Skip It

Certain groups face outsized risks from raw seafood. Pregnant women are advised to avoid all raw fish, including sushi and tartare, because pathogens like Listeria and Toxoplasma can cross the placenta and harm the fetus even when the mother shows no symptoms. These infections can lead to miscarriage or premature delivery. People with compromised immune systems, whether from medication, chronic illness, or age, face similar elevated risks from bacteria that healthy adults typically fight off without trouble.

Young children also fall into this higher-risk category. Their developing immune systems and lower body weight make them more vulnerable to both foodborne pathogens and mercury accumulation.

Making Smarter Choices

If you’re a healthy adult and you enjoy tuna tartare, eating it once or twice a week from a reputable restaurant is a solid nutritional choice. The protein density is excellent, the omega-3 content supports cardiovascular health, and the calorie count is low. To minimize risk, keep a few things in mind.

Choose yellowfin or skipjack over bigeye when you have the option, since this cuts your mercury exposure roughly in half. At restaurants, quality matters more than it does with cooked dishes. A place that handles high volumes of raw fish and follows proper cold-chain protocols is far safer than a restaurant that occasionally adds tartare as a special. At home, buy from a trusted fishmonger who can confirm the fish was frozen to FDA parasite-destruction standards. Keep it refrigerated right up until serving, and never let raw tuna sit at room temperature for more than 30 minutes.

The nutritional upside of tuna tartare is real and well-supported. The risks are manageable for most people but depend almost entirely on sourcing and handling. A well-made tartare from high-quality fish is both one of the healthiest and safest raw preparations you can eat. A poorly sourced one carries risks that no amount of nutritional benefit offsets.
