Vermouth is considered naturally gluten free. It’s made from a base of wine, which is fermented from grapes, and fortified with distilled spirits that are infused with a blend of botanicals, herbs, and spices. None of these core ingredients contain gluten, and the distillation process used for the fortifying spirit removes gluten proteins even when the original grain contained wheat, barley, or rye.
Why the Base Ingredients Are Safe
Vermouth starts as wine, and wine is generally gluten free to the FDA standard of less than 20 parts per million. Grapes contain no gluten, and the fermentation process doesn’t introduce any. The spirit used to fortify vermouth (raising its alcohol content above that of table wine) goes through distillation, which separates alcohol from proteins. Gluten is a protein, so properly distilled spirits leave it behind. The botanicals that give vermouth its distinctive flavor, things like wormwood, chamomile, coriander, citrus peel, and cinnamon, are plant-derived and naturally free of gluten.
Where Gluten Could Sneak In
The risk with vermouth isn’t in the core recipe. It comes from what happens after production. Some manufacturers add flavorings, colorings, or other additives after distillation, and these additions could potentially introduce gluten. Caramel color is a common additive in darker vermouths, but in North America it’s typically made from corn rather than wheat. If wheat is used in caramel coloring, the Food Allergen Labeling and Consumer Protection Act requires it to appear on the label.
Cross-contact during manufacturing is the other concern. Facilities that also process products containing wheat, barley, or rye may inadvertently introduce trace amounts of gluten. This is harder to detect from a label alone, and it’s the kind of risk that matters most to people with celiac disease or significant gluten sensitivity. If you’re in that category and a particular brand doesn’t carry a gluten-free label, contacting the manufacturer directly is the most reliable way to confirm their production practices.
What About Cocktails Made With Vermouth
A classic martini (vermouth plus gin or vodka) is generally gluten free, since all three components go through distillation. A Manhattan pairs vermouth with whiskey and bitters, which are also typically safe for the same reason. The place to watch out is cocktail menus at bars and restaurants, where mixers, syrups, or flavored liqueurs might contain gluten-based additives. Premixed bottled cocktails deserve more scrutiny than ones made from individual spirits.
Choosing a Vermouth With Confidence
Most major vermouth brands, including well-known names like Carpano Antica Formula, are marketed as gluten free. When shopping, look for a gluten-free statement on the label or the retailer’s product description. If the label lists only wine, spirits, sugar, and botanicals or “natural flavors” without any wheat allergen disclosure, the product is almost certainly safe.

- Plain vermouth is your safest bet. Flavored or specialty varieties with unusual additives carry slightly more risk than a straightforward dry or sweet vermouth.
- Check for allergen disclosures. U.S. labeling rules require wheat to be listed if it’s present in any ingredient, including colorings.
- Imported brands may follow different rules. European labeling standards differ, so if you’re buying a vermouth from Italy or France without English-language allergen info, the manufacturer’s website is your best resource.
For the vast majority of people avoiding gluten, vermouth is a safe choice. The combination of grape-based wine and distilled spirits means gluten proteins simply aren’t part of the equation. The only real caution applies to products with post-distillation additives or those made in shared facilities, and even those risks are small and manageable with a quick label check.
