Is Wild Boar Safe to Eat? Risks and Cooking Tips

Wild boar is safe to eat when properly handled and thoroughly cooked, but it carries more risks than store-bought pork. The meat can harbor parasites, bacteria, and viruses that domestic pork rarely contains, and hunted boar may also contain lead fragments from ammunition. Cooking to an internal temperature of at least 160°F (71°C) eliminates most biological hazards, though some risks require attention well before the meat hits the pan.

Trichinella: The Primary Parasite Risk

The most well-known danger in wild boar is Trichinella, a parasitic roundworm that causes the illness trichinellosis. You get infected by eating raw or undercooked meat containing microscopic larvae that are encysted in the animal’s muscle tissue. Once swallowed, the larvae mature in the small intestine and reproduce. Within about two days, you can develop diarrhea and abdominal pain. In the second phase, newborn larvae migrate from the intestines into your skeletal muscles, where they encyst and can remain viable for years to decades.

Outbreaks tied to wild boar are notably efficient at making people sick. Reported attack rates in wild boar-associated trichinellosis outbreaks range from 78% to 100%, meaning nearly everyone who eats contaminated undercooked meat gets ill. Cross-contamination during butchering is also a documented route of exposure, so even if you cook the final dish well, sloppy processing can spread larvae to cutting boards, knives, and other meat.

Hepatitis E in Wild Boar

Hepatitis E virus (HEV) is a less familiar but significant concern. A CDC-published study in Germany detected HEV genetic material in nearly 17% of wild boars tested, with rates as high as 24% in some hunting seasons. The virus concentrates most heavily in the liver, where viral loads were roughly 5,000 times higher than in muscle tissue. That said, the virus was still present in muscle meat at levels considered a transmission risk if the meat is undercooked.

For most healthy adults, hepatitis E causes a self-limiting illness with fatigue, nausea, and jaundice. The risk escalates sharply for people with weakened immune systems, particularly organ transplant recipients, who can develop chronic infections. Thorough cooking destroys the virus, but dishes that use wild boar liver (pâté, for example) carry a higher baseline risk and need careful temperature control throughout.

Brucellosis From Handling and Eating Feral Swine

Brucellosis is a bacterial infection you can pick up not just from eating wild boar but from handling the raw carcass. In the United States, human brucellosis is now predominantly associated with exposure to feral swine rather than domestic livestock. The bacteria can enter through skin cuts, mucous membranes, or by ingesting contaminated meat.

Symptoms resemble a stubborn flu: intermittent fever, chills, joint and muscle pain, headache, fatigue, and poor appetite. The incubation period averages 2 to 10 weeks but can stretch to 6 months, making it hard to connect the illness to a specific meal. Feral swine populations carrying Brucella have been confirmed in at least 10 U.S. states, including Texas, Florida, California, and Hawaii. If you field-dress a wild boar yourself, wearing gloves and eye protection during butchering is as important as cooking the meat properly.

Lead Contamination From Ammunition

A risk unique to hunted game is lead contamination from bullets. On impact, lead ammunition tends to flatten and fragment, sending tiny metal particles deep into surrounding muscle tissue where they are difficult to detect. According to the German Federal Institute for Risk Assessment, simply cutting away a generous area around the bullet hole does not always remove all fragments.

For most adults who eat wild boar occasionally, the lead exposure is low. But the risk is not trivial for certain groups. In children under seven, even small amounts of lead can damage the developing nervous system, potentially causing irreversible nerve damage and reduced intelligence. A single meal with high lead levels during pregnancy can affect the unborn child. For this reason, small children, pregnant women, and women planning to become pregnant should avoid eating game killed with lead ammunition. Hunters who want to minimize this risk can switch to copper or other non-lead bullets, which fragment far less on impact.

Radioactive Contamination in Some Regions

If you hunt or buy wild boar in parts of Europe or Japan, radioactive cesium-137 is a real consideration. Wild boars root through forest soil and eat mushrooms and truffles that concentrate radioactive fallout from Chernobyl and Fukushima. In southern Germany, more than 1,400 kilometers from Chernobyl, boar meat in the 2010s occasionally exceeded the levels found in Japanese boar near Fukushima. Environmental agencies in Central Europe have reported cesium-137 levels in boar meat reaching 20,000 Bq/kg, far above the EU regulatory limit of 600 Bq/kg.

This is not a concern for wild boar hunted in North America. But if you’re eating boar in Germany, Austria, the Czech Republic, or parts of Scandinavia, the meat should be tested before consumption. Many European hunting associations and local authorities offer testing services for this reason.

How to Cook Wild Boar Safely

The USDA does not list wild boar separately, but classifies feral swine under the same food safety rules as domestic pork. For whole cuts like steaks, chops, and roasts, cook to an internal temperature of at least 145°F (63°C) and let the meat rest for three minutes. For ground wild boar, the target is 160°F (71°C) with no rest time needed. Many food safety experts recommend treating all wild boar like ground meat and aiming for 160°F throughout, since the risks are higher than with inspected domestic pork.

Use a meat thermometer inserted into the thickest part, away from bone. Freezing wild boar meat was once recommended to kill Trichinella larvae, but some Trichinella species found in wildlife are freeze-resistant, so freezing alone is not reliable. Cooking to temperature is the only dependable safeguard. Keep raw wild boar separate from other foods during preparation, and wash all surfaces and utensils that contact the raw meat with hot soapy water.

What About Commercially Sold Wild Boar?

Wild boar you buy at a specialty butcher or restaurant should be safer than field-harvested meat, but the regulatory picture is more complicated than you might expect. The USDA’s Food Safety and Inspection Service classifies feral swine as subject to federal or state inspection requirements. If the meat is sold commercially, it must pass both ante-mortem (live animal) and post-mortem inspection at a slaughter facility. This means meat from boar killed in the field cannot legally enter commerce.

In practice, feral swine must be captured alive and transported to a licensed slaughterhouse. In Texas, for example, trapped swine can be held for up to seven days before being moved to an approved slaughter facility or hunting preserve. Only federally inspected meat can cross state lines, with limited exceptions for nine states participating in a cooperative interstate shipment program. If you’re buying wild boar online or at a market, confirm it was processed at a USDA-inspected facility.

Nutritional Advantages Over Domestic Pork

Setting safety aside, wild boar meat is nutritionally appealing. It contains roughly the same amount of protein as domestic pork but is significantly leaner, with lower total fat and fewer calories. Where wild boar really stands out is in its fat composition. The ratio of omega-6 to omega-3 fatty acids in wild boar averages around 9:1, compared to roughly 18:1 in conventionally raised pork. A lower ratio is generally associated with reduced inflammation.

Wild boar also has a more favorable balance of unsaturated to saturated fats. Its ratio of polyunsaturated to saturated fat is about 0.61, well above the 0.40 threshold recommended for reducing coronary disease risk. Domestic pork from both indoor and outdoor systems falls below that threshold, at 0.24 and 0.29 respectively. So while wild boar demands more caution in handling and cooking, the meat itself is a nutritionally strong choice if prepared correctly.
