The Palmyra Palm, botanically known as Borassus flabellifer, is a tropical tree species belonging to the Arecaceae family. Unlike many palm species, this tree is dioecious, meaning individual plants are either male or female, which determines which trees will bear the fruit.

These leathery, gray-green fronds are divided into numerous segments and spring from the top of the trunk in a dense cluster. This clear liquid is consumed as a refreshing, nutritious drink but naturally ferments rapidly into toddy, an alcoholic beverage.

The sap is also the source of palm sugar, or jaggery, produced by boiling neera until it thickens into a viscous fluid that hardens upon cooling. This unrefined sugar contains higher traces of minerals like iron and calcium. The fruit also yields edibles, such as the tender, jelly-like endosperm called nungu or “ice apple,” valued for its hydrating properties during the summer.

The seeds of the Palmyra Palm, when germinated, produce a subterranean sprout known as panai kizhangu that is cooked or roasted and consumed as a high-fiber snack. The mature fruit pulp is sweet and fibrous and is used in preparing traditional sweets, jams, and puddings.
