The Real Reason Hot Countries Eat Spicy Food

The most popular explanation is that spices kill bacteria, and bacteria spoil food faster in hot climates. It’s an elegant idea, and it dominated scientific thinking for decades. But recent evidence suggests the real answer is more complicated, involving a mix of what grows locally, how the body responds to heat, how flavors interact in the brain, and patterns of poverty and trade that have little to do with biology at all.

The Antimicrobial Theory and Why It Caught On

In 1998, biologists Paul Sherman and Jennifer Billing published what became the most cited study on this question. They analyzed 4,578 meat-based recipes from 93 cookbooks spanning 36 countries and found a striking pattern: as a country’s mean annual temperature rose, so did the number of spices per recipe, the total variety of spices used, and the proportion of recipes that called for the most potent germ-killing spices. The correlation held both within and among countries. They called it “Darwinian gastronomy,” the idea that cultures in warmer places evolved culinary traditions heavy on spice because it helped prevent food poisoning in the days before refrigeration.

The biology behind this is real. Garlic extract inhibits the growth of most common foodborne bacteria at concentrations as low as 25%. Clove oil is effective against both major classes of bacteria, suppressing dangerous species like Salmonella and E. coli. Cinnamon can inhibit up to 100% of tested microorganisms at higher concentrations. Oregano oil, incorporated into food packaging at just 1-2%, reduced Listeria populations by a factor of several thousand in lab conditions. Spices genuinely do kill germs.

The logic seemed airtight: hot weather speeds up bacterial growth, unrefrigerated meat spoils faster, and cultures that seasoned their food heavily got sick less often, so those recipes survived and spread.

What Newer Research Actually Shows

In 2021, a team led by Lindell Bromham reanalyzed the data using more sophisticated statistical methods, and the antimicrobial theory took a serious hit. The original correlation between temperature and spice use turned out to be largely explained by something called spatial autocorrelation. Put simply, neighboring countries tend to share cuisines because they share history, trade routes, and cultural exchange, not necessarily because they independently arrived at the same germ-fighting strategy.

When Bromham’s team accounted for these geographic and cultural relationships between countries, spice use correlated more strongly with poverty and poor health outcomes than with temperature or foodborne infection risk. Countries where people had fewer resources and worse health infrastructure tended to use more spice, regardless of climate. A follow-up analysis published in Evolution, Medicine, and Public Health confirmed this finding: “human use of spices is not a mechanism for preventing foodborne disease,” at least not in the straightforward evolutionary way Sherman and Billing proposed.

This doesn’t mean the antimicrobial properties of spices are irrelevant. Spices have been used as natural food preservatives since ancient times, and cinnamon in particular has served as a preservative across food, beverage, and cosmetic industries for centuries. But the link between hot weather and heavy spice use appears to be driven by culture, economics, and geography more than by any direct biological adaptation.

Capsaicin and the Cooling Effect

A second theory focuses on thermoregulation. Capsaicin, the compound that makes chili peppers burn, tricks your body into thinking it’s overheating. It activates the same heat-sensitive receptors in your skin and mouth that respond to actual high temperatures but has no effect on cold receptors or touch receptors. Your nervous system reads this as a warming signal and launches a cooling response.

In mammals, capsaicin triggers a coordinated set of heat-loss behaviors. In cats, doses of capsaicin caused body temperature to drop by 1 to 3°C, accompanied by panting and sweating. When capsaicin is applied directly to the brain’s temperature-regulation center (the preoptic area), it produces an immediate, dose-dependent fall in body temperature and shuts down shivering. In humans, the most obvious version of this is gustatory sweating: you eat something spicy, your forehead beads up, and as the sweat evaporates, you cool down.

In a hot, humid climate where your body is already working hard to shed heat, eating something that pushes you past the sweating threshold could provide genuine relief. This is the same principle behind drinking hot tea on a warm day. Whether this effect is large enough to have shaped entire cuisines over centuries is debatable, but it does explain why a bowl of spicy soup on a sweltering afternoon can feel surprisingly refreshing rather than punishing.

Spices Grow Where It’s Hot

The simplest explanation is also the easiest to overlook: chili peppers, black pepper, ginger, turmeric, and most other pungent spices are tropical plants. They need warmth to thrive. Chili peppers require nighttime temperatures above 50°F just to survive transplanting outdoors, and their flavor is best when the growing season is warm and sunny. Fruit that matures under cool or cloudy conditions develops weaker flavor. Even in temperate climates like Minnesota, hot peppers are a gamble because temperature swings cause flowers to drop and reduce the harvest.

For most of human history, you cooked with what was available. If you lived in Southeast Asia, you had chilies, galangal, lemongrass, and turmeric growing nearby. If you lived in Scandinavia, you had dill, caraway, and juniper. The spice trade eventually moved these ingredients around the world, but the foundational recipes of any cuisine reflect what could be grown or foraged locally. Hot countries eat spicy food in part because spicy plants grow in hot countries.

How Spices Override Spoilage Flavors

There’s also a neurological dimension. Researchers at the University of Tokyo found that spice compounds interact with the brain’s smell-processing system in a way that directly suppresses the perception of rotten odors. Using brain imaging in rats, they mapped the neural pathways activated by the smell of spoiled food, then exposed the animals to fennel and clove oils. The spice compounds activated clusters of neurons surrounding the spoilage-detection areas, and those neighboring clusters inhibited the “rotten” signal through lateral connections in the olfactory bulb.

In practical terms, strong spices don’t just add pleasant flavors on top of bad ones. They actively block your brain from registering the off-notes. In a pre-refrigeration world where meat might be a day old by the time it reached your kitchen, this would have been genuinely useful. Even today, heavily spiced marinades and sauces can make slightly past-prime ingredients palatable in a way that butter and salt alone cannot.

No Single Answer

The honest summary is that multiple forces pushed in the same direction. Spicy plants grow abundantly in the tropics, so they were cheap and accessible. Their antimicrobial properties offered a real, if modest, food safety benefit before refrigeration. Their ability to mask off-flavors made older ingredients edible. Their cooling effect provided physical relief in hot weather. And once these flavors became embedded in a culture’s cuisine, they were passed down through generations, spreading to neighboring regions through trade and migration.

The antimicrobial hypothesis is the most famous explanation, but recent evidence suggests it’s not the primary driver. Geography, economics, and cultural transmission appear to matter more than any evolutionary pressure to avoid food poisoning. The real answer is that all of these factors layered on top of each other over centuries, and no single theory captures the whole picture.
