This is why eating a source of fat alongside foods rich in these vitamins, like drizzling olive oil on a salad with leafy greens, actually helps your body absorb more of the nutrients.
Because your body stores fat-soluble vitamins in the liver and fatty tissue, you don’t need to replenish them every single day. Your reserves can sustain you through periods of lower intake. The flip side of this storage ability is that fat-soluble vitamins can accumulate to harmful levels if you consistently take too much, particularly through supplements. Vitamin A toxicity can damage the liver and, in pregnant women, cause birth defects. Excess vitamin D can lead to dangerously high calcium levels in the blood, potentially harming the kidneys. The European Food Safety Authority sets the safe upper limit for vitamin A at 3,000 micrograms per day and vitamin D at 50 micrograms (2,000 IU) per day for adults.
Getting these vitamins from food alone rarely causes toxicity. The risk comes almost entirely from high-dose supplements taken over time.

Unlike their fat-soluble counterparts, these vitamins are absorbed directly into the bloodstream from the digestive tract without needing fat as a carrier.
Your body does store small amounts of water-soluble vitamins in the liver, but once tissues are saturated, the excess is filtered out by the kidneys and excreted in urine. This means toxicity risk is low, since your body has a built-in release valve. It also means you need a steady daily supply from your diet. Urinary levels of these vitamins drop noticeably when dietary intake declines, reflecting how quickly your body cycles through them.
B12 is a notable exception within this group. Despite being water-soluble, it can be stored in the liver for years, so deficiency develops slowly. The recommended daily intake for adults is 2.4 micrograms, a tiny amount that most people get easily from animal products like meat, fish, eggs, and dairy. Vegans and older adults who absorb B12 less efficiently are the groups most likely to fall short.
How Cooking Affects Each Type
The difference between the two vitamin types has real consequences in the kitchen. Water-soluble vitamins are fragile. Vitamin C is highly sensitive to heat, oxygen, and light. Folate breaks down easily when heated. Thiamine and B6 also degrade during cooking. Boiling is especially destructive because these vitamins leach directly into the cooking water, which most people pour down the drain. Steaming or microwaving preserves significantly more of these nutrients because less water is involved and cooking times tend to be shorter.
Fat-soluble vitamins hold up better under heat but are vulnerable to oxidation. Vitamin E degrades when exposed to air, and vitamin K breaks down under prolonged UV light. Storing cooking oils in dark, sealed containers and keeping vegetables out of direct sunlight helps preserve these nutrients. Overall, though, fat-soluble vitamins survive the cooking process more reliably than water-soluble ones.

Eating fruits, vegetables, and whole grains daily keeps your levels topped up because your body won’t hold onto a surplus for long. With fat-soluble vitamins, pairing them with a source of dietary fat improves absorption. A handful of nuts with your carrots, butter on your sweet potato, or dressing on a spinach salad all make a practical difference.
The storage difference also shapes how you should think about supplements. Taking a megadose water-soluble vitamin mostly produces expensive urine, since your kidneys flush what you don’t need. Taking large amounts of fat-soluble vitamins, especially A and D, is a different situation entirely. Those doses accumulate in your tissues over weeks and months, and the effects of overdoing it may not show up right away. For most people, a balanced diet provides adequate amounts of both types without the need for high-dose supplementation.
