Your Body Stops Absorbing It

Vitamin C absorption is surprisingly efficient at normal doses. It has a sugar-like molecular shape, and when you take more than your small intestine can absorb, the leftover vitamin C sits in your gut and acts as an osmotic agent, pulling water into the bowel. But for people with hemochromatosis, a genetic condition that causes the body to absorb and store too much iron, extra vitamin C can accelerate iron buildup in organs like the liver, heart, and pancreas.

The Mayo Clinic advises people with hemochromatosis to avoid vitamin C supplements entirely. Dietary vitamin C from whole foods is generally fine, but concentrated supplement doses can push iron absorption high enough to worsen an already dangerous situation. About 1 in 200 people of Northern European descent carry the genes for hemochromatosis, and many don’t know it until complications appear.

It Can Interfere With Medical Tests

High levels of vitamin C in the blood can throw off certain diagnostic tests, particularly blood glucose monitors. The FDA has documented cases where high-dose vitamin C caused glucose readings to appear falsely elevated, leading to potential misdiagnosis. Blood concentrations of vitamin C above 3 mg/dL can cause certain glucose test strips to overestimate blood sugar levels.
