Beetroot juice is the closest thing to an “immediate” food-based blood pressure fix, with studies showing it can lower systolic pressure by about 5 mmHg within 30 minutes of drinking it. But no food works like a pill you pop during a crisis. What certain foods can do is produce measurable drops within hours, and when eaten consistently, rival the effects of some blood pressure medications.
Why Beetroot Juice Works the Fastest
Beetroot juice contains high levels of natural nitrates, which your body converts into nitric oxide, a molecule that relaxes and widens blood vessels. In a double-blind, placebo-controlled study, a single serving of beetroot juice containing about 7 millimoles of nitrate lowered central (aortic) systolic blood pressure by 5.2 mmHg compared to placebo, with the peak effect hitting at roughly 30 minutes after ingestion.
That 5 mmHg drop sounds modest, but it’s clinically meaningful. At a population level, a sustained reduction of that size is associated with significant decreases in stroke and heart attack risk. The effect from a single serving lasts several hours before gradually fading, which is why daily consumption matters more than a one-time glass.
Other High-Nitrate Vegetables
Beetroot gets the headlines, but it’s not even the highest-nitrate vegetable. Arugula tops the list at 420 mg of nitrate per 100 grams (raw), followed by bok choy at 325 mg, rhubarb at 294 mg, lettuce at 205 mg, and beetroot at 188 mg. All of these provide the raw material your body needs to produce nitric oxide.
The reason beetroot juice dominates the research is convenience. You can drink a concentrated shot of it and get a reliable nitrate dose. Getting the equivalent from a salad is possible, especially one heavy on arugula, but it’s harder to standardize. If you’re looking for the fastest result, juice or a concentrated beet shot is the most practical option. Hibiscus Tea Rivals Some Medications
Hibiscus tea is one of the best-studied herbal options for blood pressure. A large meta-analysis found that hibiscus produced blood pressure reductions statistically similar to certain pharmaceutical treatments. In one comparison, consuming 10 grams of hibiscus daily matched the effects of 50 mg of captopril, a commonly prescribed blood pressure medication. In another, 150 mg per kilogram of body weight of hibiscus outperformed a standard dose of hydrochlorothiazide, a widely used diuretic.
These results came from studies lasting weeks, not minutes. Hibiscus won’t produce a dramatic same-day drop the way beetroot juice can, but brewing two to three cups daily creates a compounding effect that, over several weeks, can meaningfully move your numbers. It works partly by acting as a natural ACE inhibitor, blocking the enzyme that tightens blood vessels. One limitation: lower doses of hibiscus (around 250 mg) were not as effective as 10 mg of lisinopril, so quantity matters.
Pomegranate Juice and ACE Inhibition

The timeline is less dramatic than beetroot juice. You’re looking at regular consumption over days to weeks rather than a single glass producing a measurable drop within the hour. Still, as a daily habit, pomegranate juice adds a layer of blood pressure support that works through a different pathway than nitrate-rich foods, meaning the two can complement each other.
What About Berries, Garlic, and Bananas?
Blueberries are commonly recommended for blood pressure, but the acute evidence is more nuanced than most articles suggest. Research shows that a single dose of blueberry polyphenols improves endothelial function (how well your blood vessels expand) within one to two hours, with a second improvement at six hours. However, that same research found no immediate change in blood pressure readings despite the vascular improvement. Bananas come up frequently because of their potassium content. The American Heart Association’s latest dietary guidance confirms that increased potassium intake lowers blood pressure, and that combining higher potassium with lower sodium is the most effective dietary strategy. Bananas, potatoes, avocados, and beans are all good potassium sources. But again, this is a cumulative dietary pattern, not a quick fix.
The Sodium and Potassium Balance
If you’re looking for the single dietary change with the strongest blood pressure impact, it’s reducing sodium while increasing potassium. The American Heart Association’s 2026 scientific statement reinforces that these two minerals have opposite effects on blood pressure: sodium raises it, potassium lowers it. This applies whether or not you already have hypertension.
In practical terms, this means that a high-sodium meal can temporarily spike your blood pressure within hours, and avoiding that meal (or replacing it with a potassium-rich alternative) can prevent that spike. Cooking at home with fresh ingredients, eating more fruits and vegetables, and cutting back on processed and restaurant food is the single most effective food-based blood pressure strategy. For readings that are elevated but not in crisis territory, the foods described above can serve as one part of a broader strategy. Beetroot juice is the only option with strong evidence for a same-day, measurable drop. Everything else builds over days to weeks, with hibiscus tea and a high-potassium, low-sodium eating pattern showing the most consistent long-term results.
