Eating a small amount of rancid sesame seeds won’t send you to the hospital. You’ll notice a bitter or sour taste, and if you swallow enough, you might experience mild nausea or an upset stomach. The bigger concern with regularly consuming rancid fats is longer term: oxidized fats generate free radicals that can damage cells and promote inflammation. A single handful of stale sesame seeds on a bagel isn’t a health crisis, but if your seeds taste off, there’s no nutritional reason to keep eating them. Rancidity also degrades the beneficial compounds that made the seeds healthy in the first place.

Bacterial Contamination Is Rare but Real
Salmonella has emerged as a significant hazard in sesame seeds and sesame-based products like tahini, and it’s increasingly recognized as a source of outbreaks. The bacteria don’t grow on dry seeds, but they can survive on them for extended periods. Roasted sesame seeds last significantly longer, up to three years in either a cool pantry or cold storage. Roasting drives off moisture and can alter the fat composition in ways that slow further degradation.
The gap between pantry and refrigerator storage matters most for raw seeds. Heat accelerates fat oxidation, so a bag of raw sesame seeds sitting above your stove will go rancid far faster than the same bag tucked in the back of your fridge. Once you open a package, transfer the seeds to an airtight container. Oxygen is the primary driver of rancidity, and minimizing air exposure is the single most effective thing you can do to extend their life.
