“Coffea cruda” literally translates to “raw coffee.” The source material is the whole, unroasted green bean of the coffee plant, the same species that produces the coffee you drink every morning. The key difference is that the beans are never roasted, which preserves a different chemical profile than what ends up in your mug.
Green coffee beans contain significantly more chlorogenic acid, a naturally occurring antioxidant compound, than roasted beans. Analysis of 52 coffee samples found that green beans contain about 5.4% chlorogenic acid by weight. Light roasting cuts that roughly in half, and dark roasting reduces it about sixfold, down to around 0.9%.
